POLISH APPLE PANCAKES
This is my Mum’s recipe, it reminds me of my childhood and we still make it quite often. We usually add apples, but when we have a lot of pears we just add them to the pancakes. Peaches also work great when they’re not too juicy.
I don’t know Polish but someone told me that this recipe is called “racuchy z jabłkami”. It’s a traditional Polish recipe, where apples are dipped in pancake batter and fried!
***
But anyway here’s a brief Polish language lesson for you, as a friend explained to me:
Racuchy mean pancakes
Jabłkami mean apple
And Racuchy z jabłkami mean pancakes with apples

What I really love about these pancakes is that they’re crispy on the outside, sweet, and fluffy on the inside.

I made a couple of changes to the recipe and we loved these pancakes. I added 1/2 tsp cinnamon and I used buttermilk. Apples cut 1/8” on mandoline. I think the key to having a fluffy pancake is the pan temperature. I used a medium high flame, watching closely. If it’s too low it will not rise properly and you will have something that more resembles a crepe.

I enjoyed the polish lesson (lol) I like to learn new things everyday, as well as discovering amazing recipes like this one. I guess the big (sometimes huge) weekend breakfast it’s a thing that happens a bit everywhere, and those moments where the family gathers around the table to enjoy such delish breakfast are the best.
I will for sure try these polish apple pancakes. I love pancakes!

If you grate the apples they are no longer “Racuchy” and the apples are supposed to be what we term in Polish as “zaprzone” which means like a par boil. The apple inside should be tender and a circle, not chopped or grated. You can also use a little baking powder or there are recipes that use a little yeast which will make them fluffier.
