These Polish Apple Pancakes
Pancakes for breakfast is always a great idea! I would have pancakes every morning if I could for the rest of my life, especially when the pancakes are so special just like these apple pancakes. They’re so quick and easy to make, and absolutely delicious!

POLISH APPLE PANCAKES
This is my Mum’s recipe, it reminds me of my childhood and we still make it quite often. We usually add apples, but when we have a lot of pears we just add them to the pancakes. Peaches also work great when they’re not too juicy.
I don’t know Polish but someone told me that this recipe is called “racuchy z jabłkami”. It’s a traditional Polish recipe, where apples are dipped in pancake batter and fried!

Jabłkami mean apple
And Racuchy z jabłkami mean pancakes with apples

Polish Apple Pancakes
Ingredients
- 1 cup (120 grams) all-purpose flour
- 1 tablespoon granulated sugar
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 large egg
- 1 cup (240 ml) whole milk or 2%
- 1 teaspoon vegetable oil
- 5 (5) apples peeled and thinly sliced or shredded
- Powdered sugar for serving
Instructions
- In a bowl, combine flour, sugar, baking powder and salt.
- In another bowl, lightly beat the egg then add milk and oil. Add to dry ingredients and stir until smooth. Fold in the apples.
- Pour batter using a ½ cup onto a lightly greased hot pan and spread to form a 5 inch circle. Turn when bubbles form. Cook the second side until golden brown and apples are tender. Sprinkle with powdered sugar if desired.
Notes:
- The apples must be cut into thin slices, and grated apples work too.
- You can substitute apples with pears or peaches.

Made them this Saturday morning and loved them, although next time I think I may microwave the apples a little to soften them first (or grate them like others have suggested)

Piękne polskie placuszki :). Zamiast mleka proponuję dać jogurt naturalny lub maślankę, można dodać 2 – 3 łyżki otrębów, siemienia lnianego (będą zdrowsze). Dzieciakom nielubiącym jabłek można przemycić je w postaci startego na tarce jabłka.

I made these according to the recipe and I am thinking that either a leavening ingredient is missing or it should be self-rising flour because they came out more like crepes with apples than these pancakes that look more like apple fritters in the picture. That said, they tasted very good. A few people liked them with butter and cinnamon sugar while others liked them with a little bit of maple syrup.
I rated this a 3 because of the leavening issue, but almost rated it a 4 because of the taste.

Original Polish recipe you add a little bit of baking powder or baking soda .
Also in the title it says they’re fried in butter but we don’t fry them in butter , you fry those in oil .
