- Tender Baby Potatoes – Called baby potatoes in the US, and “new potatoes” most everywhere else, these tiny potatoes are perfect for roasting on the grill. They cook up tender and delicious, with crispy brown edges, and way more quickly than whole baking potatoes would.
- Simple Seasoning – One of the great things about potatoes is that you can season them in infinite ways! Here I’m using a simple mix of Italian seasoning, salt, and pepper, but you can feel free to add other spices if you like.
- Easy Cooking Method – Foil pack cooking is a really fun and easy way to cook food on the grill or over a well-prepared camp fire. Simply add all of the ingredients to some foil, wrap it up, and cook! When you open the foil you’ll be thrilled at how perfectly cooked these potatoes are.

- Baby Potatoes: Make this recipe with any type of small new potatoes. Red potatoes, yellow potatoes, or even baby purple potatoes! Wash the potatoes well, there’s no need to peel them.
- Olive Oil: Regular olive oil (not extra virgin olive oil) is the best option for roasting potatoes in foil. In a pinch you could also use avocado oil or canola oil.
- Seasonings: Kosher salt, ground black pepper, and my homemade Italian seasoning give these potatoes good flavor without overly seasoning them.
That’s it! You’ll also want to have some aluminum foil, enough to make 3 packets for the potatoes to cook in.

- For even cooking, cut each potato in half, and quarter any extra large ones so that everything is relatively the same size.
- Use any type of grill! This recipe works for making roasted potatoes on a gas grill or grilling potatoes on a charcoal grill. If you are cooking over a camp fire, be sure that you’re cooking over coals rather than flames, and set the foil packs on a rack a few inches above the coals.
- On the grill, it’s best to cook these packets over direct heat.
- Check for doneness. After 30 minutes, you can carefully unwrap one of the packets and test for doneness with a fork. I recommend wearing oven or grilling gloves so that you don’t burn yourself with steam.
- Add Veggies: For extra flavor, add some sliced onion or diced bell peppers to each potato foil packet.
Storing Tips
Try to enjoy your grilled potatoes shortly after cooking them. Freshly roasted potatoes have the best texture.
If you have leftovers, store them in the refrigerator for up to 4 days. The potatoes can be reheated in the microwave (without the foil!) or put back into foil packs and reheated on the grill.

Ingredients
- 2 pounds (900 g) baby potatoes or new potatoes
- 3 tablespoons (45 ml) olive oil
- 4 teaspoons kosher salt
- ½ teaspoon ground black pepper
- 1 teaspoon Italian seasoning optional, or use your favorite seasoning blend.
Instructions
- Preheat your grill to medium heat.
- In a large bowl, toss the baby potatoes with olive oil, salt, pepper, and Italian seasoning.
- Divide the potatoes into three equal portions. Place each portion in the center of a large piece of aluminum foil. Fold the foil over the potatoes and seal the edges tightly to create packets.
- Place the foil packets on the preheated grill. Cook for 30-40 minutes, turning occasionally, until the potatoes are tender. Check for doneness by piercing with a fork.
