These easy Reuben Egg Rolls are the perfect easy appetizer for game days or gatherings. The crispy outer layer provides the perfect protection for the amazing Reuben flavor waiting inside. With minimal prep needed and only five simple ingredients, there’s no reason that you shouldn’t treat your tastebuds with this simple recipe!

Air Fryer, deep frying, and oven instructions are included.

Using the air fryer to cook appetizers is truly a breeze. The hot air circulating perfectly browns up the outside of the egg rolls in just a few short minutes of time. Let’s also not forget that you’re using LESS oil and grease and still getting to enjoy that fried taste and texture! However, if you wish to deep fry or bake these, I’m providing you with all the instructions as well.

Cooking up egg rolls can typically be a bit tedious, but not with this simple recipe. Crispy egg rolls are going to be a craving in your house, literally all the time. Make sure that you check out the rest of my appetizers for more easy and delicious apps that you can make in a snap!

Why You Will Love This Recipe

  1. Fast and easy. With a cooking time of around 10 minutes, it’s perfect for prepping right before guests arrive or as a quick appetizer to put together when guests show up unannounced. 
  2. Tastes like a Reuben sandwich. The flavor is identical to a Reuben sandwich, just with a little bit more crunch. You can try my Reuben sandwich recipe or my Reuben casserole for comparison.
  3. Easy clean-up. Cooking in the air fryer means that there is less mess and dishes to clean up at the end. But if you wish to deep fry these, it’s easy to do too!
  4. Crowd-pleasing appetizer. Offering a unique appetizer is what people love! This Reuben roll is a great way to introduce a fun new flavor and recipe. 

The Ingredients 

Ingredients needed to make Air Fryer Reuben Egg Rolls

Complete list of ingredients and amounts can be found in the recipe card below.

  • Egg roll wrappers – These can be found at the store, typically in the refrigerated aisle (you might also find them frozen). They’re thin and ready to go, which just adds to the ease. 
  • Corned beef – You can use leftover corned beef from dinner the night before or buy deli style corned beef from the store. I prefer chopping it up as I think the texture pairs well with the rest of the ingredients.  
  • Swiss cheese – Slices of swiss cheese work best as they fit perfectly inside the egg roll wrap. 
  • Sauerkraut – The tanginess of the sauerkraut stands out in a positive way with the saltiness of the corned beef and the creamy texture of the melted swiss cheese. 
  • Russian dressing –  You can also use Thousand Island dressing if you have that at home. To make your own Russian dressing, find my recipe here. 

How To Make Air Fryer Reuben Egg Rolls

  1. Preheat. Preheat the air fryer to 370°F/190°C.
  2. Fill the air fryer egg rolls. Place an egg roll wrapper on a flat surface, then add about one slice chopped corned beef, about a slice of swiss cheese, and 2 tablespoons of sauerkraut.
  3. Seal the eggrolls. Dip your finger in a small bowl of water, then run it around the edges to help seal the wrapper. Fold the bottom of the wrapper and wrap over the filling, and seal. Repeat with the rest.

  1. Cook. Air fry for 10 minutes or until golden and crispy, flipping halfway through. 
  2. Serve. Serve with Russian dressing for dipping.

Tip!

Don’t wait to cook the egg rolls all at once. Much like crab rangoon, the egg rolls will start to dry out the longer that they’re sitting and waiting to be cooked. Air fry the first egg rolls that you made, followed by the others.

Recipe Tips

  • Add a bit of spice. Adding a little bit of heat, like chili powder or sriracha, will add great flavor without overtaking that classic Reuben taste.
  • Double-check that the egg rolls are sealed. Any area of the egg roll that isn’t sealed is an escape route for the filling. Follow along the seams one last time before adding to the air fryer.
  • Avoid overcrowding. To get that crispy egg roll texture, don’t overcrowd the air fryer basket, or the deep fryer. Be sure to add no more than four egg rolls to the air fryer basket so that they’re in a single layer.

What to serve with Reuben Egg Rolls

I’m all for more than one appetizer to enjoy! While I think that these would be stellar as a treat for the big game or for St. Patrick’s Day, I also think that making a fun appetizer platter with tons of tasty options is a great idea, too.

FAQs

Can I use egg wash to seal the edges of the egg rolls?

Yes, you can use either egg wash or water to seal the edges of the egg roll. Apply egg wash in the same way that you would apply the water and proceed with the rest of the recipe.

Can you reheat egg rolls?

Reheating rolls is doable. The easiest method would be to reheat them low and slow in the oven. You can also use the air fryer, but you have to be careful not to burn them. Reheating in the air fryer is the best way to regain a crispy outer texture. 
To reheat in the air fryer, preheat and cook at 370°F/190°C for 3-4 minutes. Check the internal temperature of the egg roll to be certain it’s heated all the way through. 

Can you freeze egg rolls?

The best way to freeze egg rolls is to freeze them before they’re cooked. Create and make the entire egg roll, minus the cooking portion, and store them in a freezer-safe container or bag. When you’re ready to serve, just thaw them in the fridge and cook.

Ingredients 

  • 8 egg roll wrappers
  • 8 slices deli corned beef chopped
  • 8 slices Swiss cheese cut into ½ inch rectangles to make it easier to arrange
  • 1 cup sauerkraut drained and squeezed
  • Russian dressing for serving (or use thousand island dressing)

Instructions 

  • Place an egg roll wrapper on a flat surface, then add 1 slice chopped corned beef, a slice of swiss cheese, and 2 tablespoons sauerkraut.
  • Dip your finger in a small bowl of water, then run it around the edges to help seal the wrapper. Fold the bottom of the wrapper and wrap over the filling and seal. Repeat with the rest.

Air Fryer:

  • Preheat air fryer to 370°F/190°C, spray with cooking oil and air fryer for 10 minutes on until golden and crispy flipping halfway through. Serve with Russian dressing on the side.

Deep Frying:

  • In a saucepan or small dutch oven, heat 2 inches of oil to 350°F/180°C. Use a candy thermometer to check the temperature.
  • Deep fry egg rolls until lightly browned and crispy (4-5 minutes). Do not overcrowd the pan, drain on a wire rack or paper towel lined plate.

Oven:

  • Preheat the oven to 350°F/180°C. Line a baking sheet with parchment paper, lay the egg rolls in a single layer and spray with cooking spray.
  • Bake for 10-12 minutes flipping halfway through, or until crispy and browned.

Notes:

  • The best way to freeze egg rolls is to freeze them before they’re cooked. Create and make the entire egg roll, minus the cooking portion, and store them in a freezer-safe container or bag. When you’re ready to serve, just thaw them in the fridge and cook.
