Ham and Cheese Quiche Recipe
This easy quiche is ideal for holiday brunch, breakfast, or even dinner. It’s so easy to make as it starts with a frozen or refrigerated pie crust. It’s well seasoned and full of flavor. Plus, who doesn’t love eggs in a pie for breakfast or brunch?
The most important thing in a quiche is the fillings. I like to keep things simple and just use high-quality cooked ham, cheese, and green onions. But when it’s for a special occasion, or I’m feeling extra healthy, I like to add veggies like mushrooms, bell peppers, broccoli, caramelized onions, spinach, or tomatoes.
If a pie crust is not available, or there’s no time to make one, try these sheet pan eggs! They’re quicker, really easy to make, and taste amazing!
The Ingredients
Here’s what you’ll need to make this easy quiche recipe:

- 1 x 9-inch pie crust – I love making my own, I even have a wonderful pie crust recipe to share with you! If you’re running out of time, just buy a pre-made pie crust.
- Cooked ham – this recipe is perfect for using up leftover ham, but if you’re buying store-bought ham, then choose natural high-quality ham as it really makes a huge difference. You can also use bacon if you like, but you’ll have to cook it first.
- Cheese – I like to use cheddar cheese or Gruyère.
- Eggs – use fresh large eggs.
- Heavy whipping cream – to lighten it up, you can substitute cream with milk
- Paprika, garlic granules or powder, salt, and pepper.
- Green onions – can be substituted with shallots.
How to Make This Easy Quiche Recipe
- Preheat the oven to 400°F (205°C), and set a rack in the middle position.
- Line a tart pan or pie plate, with a single pie crust (if using frozen, thaw for 10 minutes).
- Using a fork, poke holes into the bottom and sides of the crust and place in the oven to bake the crust for about 8-10 minutes or until lightly golden. Remove from the oven, and set aside. Turn the oven down to 325°F (160°C).
- While the crust is baking, in a medium bowl, whisk the eggs and cream. Be sure to have the egg yolks mixed well into the cream. Once mixed, stir in the seasonings, ham, and cheese, stirring to evenly distribute the ingredients.
- Pour the filling into the prepared pie crust and place in the oven on the center rack.
- Bake for 25-28 minutes, or until the eggs are set and do not jiggle in the center of the pie.
Storing Tips
- To make ahead, prepare the filling and the pie crust, but only pour the filling in the crust before baking as otherwise, it can get soggy.
- Store in the fridge in an airtight container for up to 5 days.
- Freeze in an airtight container for up to 3 months.
- Thaw and reheat in the microwave or in the oven at 350°F (180°C) until it’s warmed through.

Notes:
- If you would like to use bacon instead of ham, it will have to be cooked first.
- Watch the crust as it’s baking so it doesn’t burn.
- You can brush an egg white on the outer crust to help it turn golden brown.
