This easy Bisquick Coffee Cake is a simple semi-homemade recipe for a delightful baked dessert!

The cake is light and subtly sweet with a crunchy brown sugar and cinnamon streusel topping that makes it perfect for breakfast, brunch, or an afternoon treat.

You can make this easy Bisquick Coffee Cake with just a handful of ingredients. With a moist and tender crumb and sweet and crisp streusel topping, it’s just as good as any from-scratch coffee cake, and perfect for your next breakfast or brunch gathering.

A simple shortcut, Bisquick baking mix shaves some time off of the preparation for this cake.

This coffee cake recipe was originally published on the back of the Bisquick box, and it’s still just as good. I’ve added vanilla extract to the cake to make it just a bit more special.

I also use Bisquick to make a savory breakfast casserole recipe that feeds a crowd.

Here’s what you need to make this semi-homemade breakfast cake:

  • Bisquick Baking Mix: With a blend of flour, fat, leavening, and salt, this shortcut ingredient does much of the work for us! Bisquick is used in both the cake and the topping. This recipe was tested with the traditional Bisquick but should work the same with the lower fat (heart smart) version or gluten-free version too.
  • Milk: To add moisture to the cake batter. You can use any kind of milk that you have in the fridge, including non-dairy versions.
  • Granulated Sugar: Bisquick isn’t sweet on its own, so a bit of sugar will make this cake sweet, but not too sweet.
  • Egg and Vanilla: Be sure to let your egg come to room temperature before mixing. Vanilla extract is the perfect light and warm flavoring for this cake.
  • Brown sugar, Butter, and Cinnamon: to create a delicious and gently spiced streusel topping for our cake.

How To Make Bisquick Coffee Cake

  1. Get Ready to Bake: Preheat the oven to 375°F (190°C) and spray a 9-inch square baking pan with cooking spray, or grease it with butter.
  2. Mix the Cake Batter: In a medium mixing bowl, combine the Bisquick, milk, sugar, egg, and vanilla extract. Mix well with a hand mixer. Pour the batter evenly into the prepared pan.

  1. Make the Topping: In a separate bowl, mix together the Bisquick for the topping, brown sugar, and cinnamon. Cut in the butter using a fork or a pastry cutter until the mixture resembles coarse crumbs.
  2. Bake: Sprinkle the crumbly streusel topping over the cake batter, then bake in the preheated oven for 25 minutes, or until done.

Tip!

For extra crunch, mix in chopped pecans or walnuts with the streusel topping!

Recipe Tips

  • Try other flavors: Cinnamon is the classic spice used to make coffee cake, but you can try adding nutmeg, allspice, or pumpkin spice to the topping instead.
  • Use a different pan: You can bake this in an 8-inch square pan, just add a few extra minutes of baking time. a 9-inch round baking pan works well too!
  • Don’t overbake the cake: Overcooked coffee cake will be dry. Use a toothpick to check to see if your cake is done. When it’s ready, a toothpick stuck into the center of the cake will come out without any wetness on it.
  • Add a glaze: This cake is very lightly sweet. If you want some additional sweetness, consider adding a simple glaze made with powdered sugar and half and half.
  • To Serve: Try topping slices of coffee cake with whipped cream and fresh berries.

Storing Tips

Store coffee cake in an airtight container at room temperature for up to 2 days.

You can also freeze Bisquick coffee cake! Wrap either the whole cake or single slices in plastic wrap, then wrap again with foil or place in a ziptop bag. Freeze for up to 3 months.

To reheat, warm the cake in the microwave for 10-30 seconds and enjoy!

This easy Bisquick Coffee Cake is a simple semi-homemade recipe. The cake is light and subtly sweet with a brown sugar and cinnamon streusel topping.

Equipment

  • 9 inch square pan
  • Mixing Bowl

Ingredients 

Cake Ingredients:

  • 2 cups (240 g) Bisquick baking mix
  • ⅔ cup (160 ml) milk
  • 2 tablespoons (25 g) granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon pure vanilla extract

Topping Ingredients:

  • ¾ cup (90 g) Bisquick baking mix
  • ¾ cup (150 g) light brown sugar
  • 4 tablespoons (57 g) unsalted butter
  • ½ teaspoon ground cinnamon

Instructions 

  • Preheat your oven to 375°F (190°C), or 170°C if you have a fan oven. Grease an 9-inch (approx 22 cm) square baking pan.
  • In a medium mixing bowl, combine the cake ingredients: Bisquick baking mix, milk, granulated sugar, egg, and vanilla extract. Mix with a hand mixer until well mixed. Pour the batter into the prepared pan, spreading it evenly with a spatula.
  • In a separate bowl, prepare the topping by mixing together Bisquick mix, brown sugar, and cinnamon. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
  • Sprinkle the streusel topping evenly over the cake batter in the pan.
  • Place the pan in the preheated oven and bake for about 25 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the coffee cake to cool slightly before cutting into squares. Serve warm.
