- In a large bowl combine the dry ingredients; flour, sugar, baking powder, and salt.
- Next, add the cold butter cubes into the flour mixture with a pastry cutter until it resembles coarse crumbs (you can also use a food processor instead).
- Gently fold in your chopped strawberries until they are evenly distributed.
- In a separate bowl, combine the egg and buttermilk and mix well.
- Add your buttermilk and egg mixture into the flour mixture and combine until it becomes a dough.
- Transfer your dough to a flat and lightly floured surface, and form a round disc that is about 1 inch thick. Then, using a sharp knife, divide the disc of dough into 8 equal portions.

Tips and Tricks for Making Strawberry Scones
Following the directions above will make some fantastic scones. But, as with any recipe, there’s always room for little tweaks depending on your liking. Here are a few tips and tricks to keep in mind:
- Don’t overwork the dough. This is the most important tip that I can give you. You are working with cold butter, and I recommend that you use a pastry cutter to work in the butter with the flour. When you get a coarse crumb, stop right away. If you keep going, you will risk ruining the texture of the scones.
- Thin the drizzle. If you like your drizzle thinner, you can add in 1 more tablespoon of cream.
- Add more strawberries. For a more berry flavor, add in more a little more strawberries. Feeling adventerous? Add in some chocolate chips!
- Sweeten it up. If you like your scones to be a little sweeter, sprinkle your strawberries with a tablespoon of sugar before folding them into your dough.

I recommend using fresh strawberries. However, you could use frozen strawberries as well. Keep in mind that it may change the texture of your scones a bit, and they won’t have as much flavor.
It is important that once you prepare your scones, you freeze them for 20 minutes before baking. When you freeze the scones, it helps them rise to the height they need to be without spreading while baking. Basically, it makes for a better scone.
These scones will probably vanish quickly, but if you have leftovers, you can store them in the refrigerator. Place them in an airtight container in the fridge for 5 to 7 days. To serve, reheat in the microwave for 15 seconds.
