Bang Bang Chicken Skewers Recipe Highlights

  1. Delicious Flavors – The Bonefish Grill wasn’t playing around when they created the original Bang Bang shrimp recipe, and it pairs so well with chicken, too. This sauce is sweet, spicy, tangy, creamy, and completely irresistible!
  2. Easy to Make All Year Round – My favorite way to cook Bang Bang chicken skewers is to grill them outdoors, but you can just as easily make this recipe in your oven or air fryer as well.
  3. Versatile Dish – Chicken skewers of all varieties can be a main dish or a fun finger food for a BBQ or a picnic. Don’t wait for the perfect occasion to make these – they will always be a huge hit.

Bang Bang Chicken Key Ingredients

Here’s what you need to make these marinated chicken skewers:

the ingredients needed to make bang bang chicken skewers, all measured into small bowls and arranged on a marble counter, along with wooden skewers.

Complete list of ingredients and amounts can be found in the recipe card below.

  • Chicken: Boneless, skinless chicken breast, cut into cubes is perfect. You can also make this with boneless, skinless chicken thighs, or chicken tenderloins if you prefer.
  • Seasonings: Along with the bang bang sauce, the chicken is seasoned with smoked paprika, garlic powder, onion powder, salt, and pepper.
  • Homemade Bang Bang Sauce: This is so simple to make from scratch! Just whisk together some mayo, sriracha hot sauce, sweet chili sauce, honey, and fresh lime juice. Want an even creamier sauce? Use Japanese Kewpie mayo!
  • Skewers: You’ll need to make sure that you have several metal BBQ skewers or bamboo skewers ready to go. If you’re using wooden skewers, be sure to soak them for at least 30 minutes before loading them up so that they don’t burn.

6. Serve: Rest the chicken for about 5 minutes, then serve!

Tip!

Allow the chicken skewers to rest after you pull them from the grill. A few minutes will give the chicken a chance to redistribute its juices, resulting in perfectly juicy grilled meat.

Recipe Tips

  • To thread the chicken, avoid squeezing the chicken pieces onto the skewers too tightly, but don’t leave any space between the chicken either.
  • Add veggies. You can add peppers, onions, or tomatoes to the skewers with the chicken or load up the veggies on their own skewers to grill along with the chicken. These grilled veggie kabobs make a super simple side dish!
  • Check for doneness. Chicken is fully cooked when it reaches an internal temperature of 165°F or 74°C. Use an instant read thermometer to check.

To Air Fry Bang Bang Chicken Skewers

After the chicken has marinated and skewered, place the chicken skewers in a single layer in your air fryer basket.

Air fry at 400°F (200°C or 180°C for fan oven) for 10-12 minutes, flipping the chicken over halfway through. Cook longer, if needed, until the chicken reaches an internal temperature of 165°F/74°C.

Serve, brushed with the remaining Bang Bang Sauce.

To Bake Bang Bang Chicken Skewers

Start by preheating the oven to 400°F (200°C) and lining a baking sheet with parchment paper.

Season the chicken and marinate it, then add it to skewers. Bake for 20-25 minutes, flipping halfway or until the chicken is fully cooked.

Remove the skewers from the oven, and brush with the rest of the Bang Bang sauce before serving.

If you want some extra char marks on the chicken, place the skewers under the broiler for a few minutes.

Storing Tips

Any leftover bang bang chicken can be stored in an airtight container in the fridge for up to 4 days. Reheat in the microwave or in a skillet on the stovetop.

If you’ve used metal skewers, be sure to remove them before microwaving!

Any leftover Bang Bang sauce can be stored in the refrigerator as well and used for brushing over or dipping the chicken when you reheat it.

These sweet and spicy chicken skewers can be paired with so many of your favorite side dishes! I love to serve grilled chicken with a fresh summer salad, so try some of these favorites:

  • Kale Salad with Lemon Vinaigrette
  • Refreshing Watermelon Salad with Feta
  • Hawaiian Macaroni Salad
  • Easy Broccoli Slaw
  • Strawberry Feta Salad

Recipe FAQs

Is Bang Bang Chicken Spicy?

The sauce on these chicken skewers is a bit spicy but balanced from the honey and mayonnaise. If you’d like them less spicy, you can reduce the amount of hot sauce added. On the other hand, you can always add a bit more sriracha if you want some extra heat!

Can I make this recipe ahead of time?

I don’t suggest marinating the chicken in the bang bang sauce for more than an hour or so, as the lime juice will start to break down the muscle fibers in the meat. You can make the sauce ahead of time, though, and store it in the fridge for up to a week.

How long should I air fry bang bang chicken skewers?

At 400°F, it will take 10-12 minutes to air fry chicken skewers. However, this time may vary based on your particular air fryer and the size of your chicken pieces.

Equipment

  • 8 Skewers (soaked in water)

Ingredients

Bang Bang Sauce:

  • 1 cup (250 g) mayonnaise
  • ¼ cup (60 ml) sriracha or hot sauce
  • ¼ cup (60 ml) sweet chili sauce
  • 2 tablespoons (30 ml) honey
  • 1 tablespoon (15 ml) lime juice

Chicken Skewers

  • 2 pounds (900 g) chicken breast boneless and skinless, cut into 1-inch pieces
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • Soak your skewers in water for about 20-30 minutes to prevent them from burning on the grill.
  • Prepare Bang Bang Sauce: In a bowl, whisk together mayonnaise, sriracha or hot sauce, sweet chili sauce, honey, and lime juice. Set half aside for brushing on cooked chicken.
  • Marinate Chicken: In a large bowl, mix cubed chicken with smoked paprika, garlic powder, onion powder, salt, and black pepper. Add half of the Bang Bang sauce and mix well. Let it marinate while you preheat the grill and soak the skewers.
  • Thread the marinated chicken pieces onto the soaked skewers.
  • Preheat your grill to high heat. Clean and lightly oil the grill grates.
  • Place the skewers on the grill. Cook for 3-4 minutes on each side, or until the chicken reaches an internal temperature of 165°F (74°C).
  • After grilling, let the skewers rest for about 5 minutes. Brush them with the reserved Bang Bang sauce before serving.

Notes:

  • Air Fryer Instructions: Air fry the marinated skewers at 400°F (200°C) for 10-12 minutes, flipping the chicken over halfway through. Cook longer if needed, until the chicken reaches an internal temperature of 165°F/74°C. Serve, brushed with the remaining Bang Bang Sauce.
  • Oven Instructions: Preheat the oven to 400°F (200°C or 180°C for fan oven) and lining a baking sheet with parchment paper. Prepare the skewers as directed in the recipe, and bake them for 20-25 minutes, flipping halfway. Brush with remaining sauce before serving.
  • To thread the chicken, avoid squeezing the chicken pieces onto the skewers too tightly, but don’t leave any space between the chicken either.
  • Add veggies. You can add peppers, onions, or tomatoes to the skewers with the chicken, or load up the veggies on their own skewers to grill along with the chicken. These grilled veggie kabobs make a super simple side dish!
  • Check for doneness. Chicken is fully cooked when it reaches an internal temperature of 165°F or 74°C. Use an instant read thermometer to check.
