These French Dip Sliders are completely delicious and super simple to make.

I love making these small sandwiches for dinner on busy weeknights, or as a snack to feed a small crowd.

  1. Delicious Caramelized Onions – It takes a little bit of time, but caramelizing the onions is a must when making french dip sliders. They bring the rich flavor of a french dip sandwich or french onion soup: sweet, savory, and perfect.

Here’s what you need to make these savory roast beef sliders on sweet rolls:

  • Caramelized Onions: Slice yellow onions thinly, and saute them slowly with fresh thyme, oil, and butter to bring out all of their natural sweetness.
  • Sweet Hawaiian Rolls: If you ever needed an excuse to buy a package of King’s Hawaiian rolls, this is it! They are soft and small; perfect for sliders. 
  • Dijon Mustard and Mayonaise: Mixed together, this adds moisture to the bread and a creamy, savory flavor.
  • Provolone Cheese: This mild cheese is perfect with roast beef.
  • Butter and Dry Onion Soup Mix: This creates a delicious topping for our french dip sliders.
  • Au Jus: Mix up a packet of au jus according to the directions. This is the “dip” part of french dip sandwiches!

How To Make French Dip Sliders

  1. Caramelize Onions: Heat olive oil and melt butter in a pan over medium heat, and add the sliced onions and thyme. Cook the onions, stirring constantly. It takes at least 20 minutes to properly caramelize onions, so continue cooking them until they are golden brown. Remove the springs of Thyme.
  2. Split the Rolls: Slice the rolls in half using a serrated knife to separate the tops from the bottoms. Leave the individual pieces intact. Add the bottom of the rolls to a buttered baking dish.
  3. Spread: Coat the bottom of the rolls evenly with mayo and mustard.
  4. Start Layering: Start by adding half of the provolone cheese in an even layer, then add all of the roast beef.

  1. Keep Layering: Spread the caramelized onions over the beef, then cover with the rest of the cheese.
  2. Top and Bake: Add the top of the rolls. Brush with melted butter, then sprinkle with dried onion soup mix. Bake, covered with foil, in a preheated 350°F/180°C oven for 15 minutes, then uncovered for 5 minutes until the tops are golden brown.
  3. Serve: While the sliders are baking, prepare the au jus according to the package directions (typically you mix the powder with water and heat on the stove). Serve the roast beef sliders with au jus on the side, garnished with fresh parsley if desired.

Tip!

Instead of dried onion soup mix on top of the sliders, try Everything Bagel Seasoning, or sesame seeds instead!

Recipe Tips

  • A 7×11-inch baking pan is the perfect size for a package of King’s Hawaiian rolls. If you have a standard Pyrex baking dish, it’s probably the right size. You can also bake sliders in a 9×9 pan, you just need to arrange them differently.
  • Switch up the Cheese: Try swiss or mozzarella cheese instead of provolone.
  • Slice With a Serrated Knife: Hawaiian rolls are very soft, so it’s easiest to slice them using a serrated knife. A straight-edged knife will crush them. You can also put the rolls in the freezer for 15 minutes before slicing to make it even easier!
  • Can’t Find Hawaiian Rolls? Try using packaged soft dinner rolls instead.
  • Variations: Try these sandwiches with horseradish sauce instead of the mayo/mustard spread. You might also like to add some banana peppers, or try french fried onions instead of (or in addition to) caramelized onions.

Storing Tips

These sliders are best when you eat them shortly after removing them from the oven.

If you have leftovers, store them in the fridge for up to 2 days. Reheat in the oven or air fryer, just until they’re warm again.

What To Serve With French Dip Sliders

Make them a Meal: Serve these sandwiches with easy side dishes like Air Fryer Tater Tots, and a Wedge Salad.

Where do I find dry onion soup mix?

This is most often found in the soup aisle of the grocery store. packets of it come in a small box. You can use it to make french onion soup, but it also adds tons of flavor to recipes.

What is the best meat to use for french dip sliders?

Your favorite deli roast beef is the easiest meat to buy when making french dip sliders. You can also use leftover roast beef that you’ve cooked at home or any thinly sliced beef.

What is Au Jus?

In French, au jus means “of meat”, and refers to the natural juices created when roasting meat. Sometimes, if I get sliced roast beef from a local deli, they’ll include the au jus with it. Otherwise, it’s easiest to buy the instant au jus packets.

Equipment

  • Skillet
  • 7×11 inch baking pan/sheet
  • Serrated Knife

Ingredients 

For the Caramelized Onions:

  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 2 medium yellow onions thinly sliced
  • 2 sprigs of thyme whole
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

To Assemble the Sliders:

  • 12 Hawaiian sweet rolls
  • 2 tablespoons dijon mustard
  • ¼ cup mayonnaise
  • 12 slices provolone cheese
  • 1 pound thin sliced deli roast beef
  • 2 tablespoons butter + more for buttering the pan
  • 2 tablespoons dried onion soup mix
  • 1 packet au jus made according to package instructions
  • parsley for garnish

Instructions 

  • In a skillet, heat olive oil and melt butter and add onions and thyme. Saute (keep stirring) until caramelized. This takes 15-20 minutes. Remove the thyme sprigs, season with salt and pepper, and remove from heat.
  • Lightly butter a 7×11” pan with softened butter, and preheat the oven to 350°F/180°C.
  • Slice the rolls lengthwise leaving them intact, and place the bottom half in the buttered pan. Spread the mayo and mustard
  • Then add a layer of cheese (use half of the cheese), all of the roast beef, and the caramelized onions. Layer the remaining cheese, and cover with the top buns over the cheese.
  • Brush the buns with melted butter, and sprinkle with dried onion mix. Bake in the oven covered with foil for 15 minutes, then uncover and bake for 5 more minutes or until the tops are golden brown.
  • Prepare the au jus gravy as you wait for the sliders to bake, and serve on the side. Garnish with parsley.
