I’ve been trying to eat as healthy as I can, because I think that our food have a great impact on defining who we are today. If we eat healthy, we feel better and our spirits are high. But if we eat lots of processed, sugary and fatty foods, it drags our moods to the bottom, we gain weight and sometimes even start having healthy issues.

Therefore, in the mornings I try to eat a good and satisfying meal. It could be a bowl of oats topped with my favourite fruits or an omelette with vegetables. For lunch, I’d usually have a proper balanced meal  that consists of vegetables, some proteins and carbohydrates. There are lots of recipes on my blog that I make systematically, such as slow cooker beef and broccoli, beef stroganoff, etc. However, the trickiest part in my daily meal planning is always dinner. I like to keep my dinners light, but at the same time filling and delicious. That’s why most of the time I make soup for dinner. I like to use Redmond Multicooker to make soups, as it saves my time and cooks the meals for me in a simple and healthy way (very little or no oil needs to be added). The soup I made today satisfied my tasting buds while provided me with much needed nutritions after a long day at work.

So today I made this really healthy and tasty carrot-coriander soup. This is a very easy soup to make, and doesn’t take much time to make especially when made in Redmond Multicooker.
All I needed to do was peeling and chopping the carrots, onions and fresh coriander. Sautéing the vegetables in my multicooker. Then adding vegetable stock and all the rest of ingredients into Redmond Multicooker. To make the taste stronger, I added some dry coriander as well, and seasoned with salt and pepper. I pressed the button and relaxed for 20 minutes or so while my dinner was getting ready!
The multicooker that I use is the Redmond RMC-M150, which is a great kitchen gadget that makes your life much easier. It can pretty much cook anything for you. It comes with a 3D heating system so it means that it cooks your food well, and that the heat is evenly distributed while your food is being cooked. To read my full review click here. Carrot Coriander Soup

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion sliced
  • 450 grams carrots sliced
  • 1 tsp ground coriander
  • 1 litre vegetable stock
  • large bunch fresh coriander roughly chopped
  • salt and freshly ground black pepper

Instructions

  1. If making in Redmond Multicooker:
  2. Set the multicooker on "fry" program.
  3. Heat vegetable oil and cook onions with carrots for 4 minute until soft.
  4. Add chopped coriander, and cook for 1 more minute.
  5. Add vegetable stock and seasoning. Close the lid and set on "express" program.
  6. Cook for 20 minutes or until vegetables are soft and tender.
  7. Using a blender, blend until smooth.
  8. If using a pot:
  9. In a cooking pot, heat vegetable oil and cook onions with carrots for 4 minute until soft.
  10. Add chopped coriander, and cook for 1 more minute.
  11. Add vegetable stock and seasoning. Close the lid and cook on medium heat for 20 minutes or until vegetables are soft and tender.
  12. Using a blender, blend until smooth.

    This is going on my dinner menu this week. We always have carrots in abundance and my husband LOVES cilantro. The Redmond Multicooker sounds nifty – I wish I had one!

    I eat a ton of soups also, it’s such a great way to get tons of nutrition, but at the same time filling and delicious. The multi cooker looks like a great tool to make dinner time even easier!!

    We have a multicooker, but I’ve only ever used it for rice; I need to make this soup though as it’s beautiful! Homemade soup is just so comforting and perfect for the end of a busy day!
