- Pizza Dough: I highly suggest that you make your own pizza dough from scratch! Try this traditional pizza dough recipe, or my recipe for pizza dough using a bread machine. Otherwise, use your favorite store-bought pizza dough. You’ll need a bit of semolina flour to keep the dough from sticking too.
- Shredded Chicken: It’s really easy to cook up chicken breasts and shred them for recipes like Buffalo Chicken Pizza. Try this stovetop shredded chicken or crockpot shredded chicken.
- Buffalo Sauce: A homemade buffalo wing sauce makes your pizza taste just like a plate of wings!
- Ranch Dressing: Make a fresh, homemade ranch dressing or use your favorite.

How to Make a Buffalo Chicken Pizza
Use these instructions to make buffalo chicken pizza using fresh pizza dough.
- Preheat: Turn on your oven to the highest temperature possible (mine goes up to 550°F). Place a pizza stone in the oven if you have one, and let both the oven and the stone preheat.
- Season Chicken: In a small bowl, combine the shredded chicken with the buffalo sauce and set it aside.
- Shape the Dough: Sprinkle a pizza peel with semolina to prevent the dough from sticking, then shape/stretch the dough gently with your hands into a 10 or 12-inch circle. Test to be sure that the dough will slide easily off the pizza peel, and add more semolina if necessary.
- Top the Pizza: Spread ¾ of the ranch sauce onto the dough, then pile the chicken over the ranch. Top with mozzarella cheese, then blue cheese.
- Bake: Brush the edges of the pizza with olive oil and bake in the preheated oven for 4-5 minutes. Turn the oven to the broiler, and then broil for 3-5 minutes, watching to ensure that the pizza browns but doesn’t burn.
- Serve: Remove the pizza from the oven and allow it to cool for 5-10 minutes. Garnish with chopped green onion, and drizzle with remaining ranch dressing before slicing and serving.
Tip!
If using a pre-baked crust, top the crust as instructed, and follow the instructions on the package to know how long to bake it. You may only need to broil it to warm everything up and melt the cheese.
How to Make Buffalo Sauce
My recipe for Buffalo Wing Sauce uses Frank’s Red Hot Sauce, Butter, and Honey to make the perfect spicy-sweet sauce. I definitely suggest looking for Franks, since it’s the original, and the hot sauce used in Buffalo to make the famous wings. If you can’t find it, you can use your favorite brand of hot sauce instead.
The difference between just hot sauce and buffalo sauce is that a good buffalo sauce will use butter to mellow out the heat a bit. You can adjust the spice by increasing or decreasing the amount of butter you use in the sauce.

Buffalo Pizza Tips
- Use fresh pizza dough. I know that I say you can use a pre-baked crust for this recipe, and you totally can, but using fresh dough makes this recipe so much better.
- Don’t use a rolling pin. When forming pizza dough, a rolling pin will take away the air bubbles in the dough that make for really delicious pizza dough. Instead, shape the dough into a circle by stretching and pulling it with your hands.
- Have extra sauce available. It’s delicious to have sides of buffalo sauce and ranch available for dipping the pizza into!
- Use leftover chicken! This recipe works really well with leftover shredded chicken of any type. A grocery store rotisserie chicken is perfect too.
- The chicken goes under the cheese. It might seem backward to put the chicken under the mozzarella cheese, but it is done this way on purpose. If you don’t protect the shredded buffalo chicken this way, it can dry out or burn.

Instead of using a pizza stone, you can bake this pizza on a sheet pan in the oven. Coat your sheet pan with olive oil, and form the dough into a rectangle inside of the pan. Add the toppings, and bake in a preheated 450°F/230°C oven for 15-25 minutes. Keep an eye on things. If the bottom crust seems done but the top needs more time, switch to the broiler to finish the job.
Want to give your buffalo chicken pizza some extra flavor? I like to add variations when I’m garnishing this one. Try fresh parsley or cilantro, thinly sliced celery, or diced fresh tomatoes added after the pizza is done cooking.

Buffalo Chicken Pizza
Ingredients
- 1 pizza dough/crust homemade or store bought, 10-12 inch
- 1 cup cooked shredded chicken
- ½ cup buffalo sauce
- ½ cup ranch dressing
- ½ cup shredded mozzarella cheese
- ¼ cup crumbled blue cheese
- 1 tablespoon chopped green onion garnish
Instructions
- Preheat the oven to the highest temp possible (mine goes up to 550°F) and place the pizza stone in the oven if you have one.
- In a small bowl, combine the shredded chicken with buffalo sauce and set aside.
- Sprinkle the pizza peel with semolina to prevent the dough from sticking, then shape/stretch your dough gently with your hands into a 10 or 12-inch circle (don’t use a rolling pin). Before adding any toppings, make sure that the pizza can slide off onto the pizza stone easily. If not, just lift it up gently and sprinkle with more semolina. Don’t stretch the dough too quickly, and start working it from the center. Leave the edges puffed up for a great pizza shape and bubbles.
- Spread ¾ of the ranch sauce on the dough, pile the chicken over the ranch. Top with mozzarella cheese, and blue cheese.
- Brush the edges of the pizza with olive oil and bake in the preheated oven for 4-5 minutes, then switch on the broiler and bake for 3-5 more minutes but keep an eye on it as the top bubbles and browns. Remove from the oven, allow to cool for 5-10 minutes. Garnish with chopped green onion, drizzle with the remaining ranch sauce, slice and serve.
