Bellini makes a great brunch cocktail or a dessert cocktail that you can serve after dinner. It’s a simple cocktail that comes together in just 5 minutes, and it’s loved by everyone.
This cocktail is perfect for special occasions such as holiday gatherings, New Year’s Eve, Valentine’s Day, or even a night with friends or family.

A true bellini is made with peaches, but we’re changing things up here and using raspberry sorbet for a fun twist! I will share with you a few more interesting flavor possibilities so you can get creative, and make this cocktail your own.
What is a Bellini?
Bellini is a sparkling cocktail that originated in Venice, Italy. The classic version is made with Prosecco and peach puree or nectar. However, many variations of bellini are now made using champagne or any sparkling wine instead of prosecco and different fruits and even sorbets. The modern variations cannot be referred to as a true bellini, but they’re definitely delicious!

- Sorbet: Bellini is made with peach puree, but we’re using a sorbet here instead. Sorbet is smooth (just like peach puree), it’s fresh, and will give you that creaminess that you want in a bellini. I’m using a raspberry sorbet, but any flavor works here! Think mango, lemon, watermelon, lime, grapefruit, or peach sorbet.
- Champagne or Prosecco: A classic bellini is made with Prosecco, but champagne or any sparkling can also work so choose your favorite. I’m using an extra dry champagne here to balance out the sweet sorbet, but semi dry would also be well.
- Lemon: A squeeze of lemon juice will bring out the flavor of the raspberry sorbet. Use fresh lemon juice.
- Fresh Raspberries, for garnish.
How To Make Sorbet Bellini
- In a single champagne flute, add 2 medium scoops of raspberry sorbet. You should fill the glass up about ¾ full.
- Squeeze about 1 teaspoon of fresh lemon juice in the glass.
- Pour 4 ounces (or until you fill the glass) with champagne and top with fresh raspberries.
- Garnish with lemon slices, and serve immediately.
Recipe Tips
- Make a Mocktail: It also is easy to make it alcohol-free by swapping out the champagne for 7up, Sprite, or Seltzer water.
- Don’t make the cocktail until ready to serve! The prosecco or champagne will go flat if the bellini sits for too long.
- This cocktail is so fun when served poolside in plastic flutes in the summer!
- Turn these bellinis into popsicles! Make the cocktail in a larger batch, then pour into molds and freeze.

If you don’t want to use sorbet or sherbet, you can use fruit puree instead. For one bottle of prosecco or champagne, you will need ½ cup of raspberry sauce or puree.

- 1 teaspoon fresh lemon juice
- 4 ounces champagne dry or semi-dry works great to balance out the sweet sorbet
- Fresh raspberries for garnish
- Fresh lemon slices for garnish
