- Pasta: I’m using rotini today, but any type of short pasta can be substituted. Try it with farfalle, elbow macaroni, or shells.

Mexican Pasta Salad

Ingredients
- 16 ounces (450 g) pasta
- 2 medium ears of corn or 1 cup corn kernels
- 3 medium bell peppers red, green and yellow
- 1 15-ounce can (425 g) black beans drained and rinsed
- ½ small red onion diced
- ¼ cup fresh cilantro chopped
- 1 large avocado diced
- 1 ½ cups cherry tomatoes halved
- ¼ cup (65 g) cotija cheese crumbled, or feta cheese
Dressing:
- ¾ cup (190 g) mayonnaise
- 1 ½ cups (375 g) sour cream or Greek yogurt
- 3 tablespoons taco seasoning
- 4 teaspoons (20 ml) lime juice
- 2 cloves garlic minced
- ¾ teaspoon salt
Instructions
- Add water to a large pot and bring to a boil over medium-high heat. Salt the boiling water, then add the pasta. Stir briefly. Cook the pasta uncovered for the time indicated on the package. Drain and rinse under cold water to stop the cooking process and set aside.
- Optional: Place the ears of corn on the grill or cut the kernels off the cob then add to a skillet with a tablespoon of oil and cook, turning occasionally, until charred and cooked through, about 10-15 minutes. Remove from the grill or skillet and let cool slightly.
- In a small bowl, combine the mayonnaise, sour cream, taco seasoning, lime juice, garlic, and salt. Mix until well combined. Taste the dressing, and add more salt if needed (it must be well seasoned).
- In a large mixing bowl, combine the cooked pasta, charred corn kernels, bell peppers, black beans, red onion, cilantro, avocado, and cherry tomatoes.
- Pour the dressing over the salad and gently toss until everything is evenly coated. Top with cotija or feta cheese.
- Serve immediately or refrigerate for a couple of hours to allow flavors to meld together before serving.
Notes:
- In place of the fresh corn, use 1 cup of canned or frozen corn kernels in the recipe. You can char those kernels the same way, just be sure that they are thawed/drained and dry before cooking them.
