Butter Chicken Ingredients

I usually make this Instant Pot butter chicken with boneless skinless chicken thighs because they stay tender and flavorful during pressure cooking. Boneless skinless chicken breasts also work if that is what you have on hand.
For the spices, you will need turmeric, smoked paprika, garam masala, cumin, salt, and optional chili powder for extra heat. They are all easy to find in most well-stocked grocery stores.
Heavy cream gives the sauce its rich, creamy texture. Readers have also reported good results using half-and-half or full-fat coconut milk, although the finished sauce will be a little different in richness and flavor.
How to Make Instant Pot Butter Chicken?

- Start by sautéing the ginger and garlic in butter until fragrant. I prefer this extra step because it softens the ginger and brings out more flavor than simply adding everything to the pot at once.
- Add the spices and cook briefly, stirring constantly, to bloom them in the butter.
- Add the tomato sauce and ¼ cup of water, followed by the chicken. Stir to combine, then secure the lid.
- Pressure cook on high for 6 minutes. Keep in mind that the Instant Pot will take about 10 minutes to come to pressure before the cooking time begins. When the cooking cycle is complete, carefully quick release the pressure.
- Stir in the heavy whipping cream until the sauce is smooth and evenly combined. Select Sauté and let the sauce simmer until it thickens to your preferred consistency, stirring occasionally.
Tip!
Make sure not to add the cream before pressure cooking as it will become super thin, and might even separate.

Is This Recipe Really Spicy?
This butter chicken has a medium level of heat when the chili powder is included. For a milder version, especially if you’re serving children, simply leave it out. The remaining spices add warm, savory flavor without making the dish particularly hot.
Can I Use Frozen Chicken?
I only recommend using frozen chicken here if the pieces are frozen separately rather than in one solid block. The Instant Pot may take longer to come to pressure, and the chicken should reach an internal temperature of at least 165°F (74°C) before serving.
What to Serve Butter Chicken With?
Butter chicken is especially good with rice or naan to soak up the creamy sauce. Here are a few of my favorite ways to serve it:
- Basmati rice: A classic pairing for butter chicken, and easy to make in the Instant Pot.
- Jeera rice: Fragrant basmati rice flavored with cumin that pairs really well with the warm spices in the sauce.
- Brown rice: A hearty alternative if you prefer brown rice with your curry.
- Naan bread: Perfect for scooping up the chicken and every bit of the creamy sauce.
- Mushroom bhaji: A flavorful vegetable side that works well alongside butter chicken and rice.

- Use tomato sauce (or passata) for the smoothest sauce. You can also use fresh tomatoes or canned crushed tomatoes if they are blended until smooth and strained before adding them to the Instant Pot.
- For the best flavor, use a good garam masala blend. You can also make my homemade garam masala.
- If your tomato sauce tastes particularly acidic, you can add 1 teaspoon of granulated or brown sugar before pressure cooking to balance the flavor.
- Be sure to cook the chicken at high pressure, not low pressure.
- For a richer sauce, stir in a little extra butter after pressure cooking.
- Finish with chopped fresh cilantro, mint, or parsley just before serving.
- Full-fat canned coconut milk can be used instead of heavy cream, although it will change the flavor and texture of the sauce. If you need the recipe to be dairy-free, you will also need to replace the butter with a suitable dairy-free alternative.
- If you do not have fresh ginger, ½ teaspoon of ground ginger can be used instead.

Storing Tips
- Store leftover butter chicken in an airtight container in the refrigerator for 3 to 4 days. Reheat it in the microwave or on the stovetop until it reaches 165°F (74°C), adding a small splash of water if the sauce has thickened.
- For longer storage, freeze the butter chicken in a freezer-safe container for up to 3 months. Thaw it overnight in the refrigerator before reheating to 165°F (74°C).

- 3 tablespoons unsalted butter
- 5 cloves garlic minced or crushed (about 5 teaspoons)
- 1 2-inch piece (5 cm) fresh ginger root grated (about 2 tablespoons)
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon ground turmeric
- ½ teaspoon chili powder (optional)
- ¾ teaspoon table salt add more if needed
- 1 15-ounce can (425 g) tomato sauce
- ¼ cup (60 ml) water plus more for deglazing
- 2 pounds (900 g) boneless skinless chicken thighs cut into bite-size pieces
- ¾ cup (177 ml) heavy whipping cream
- 2 tablespoons chopped fresh cilantro parsley, or mint, for garnish
Instructions
- On the Instant Pot press on SAUTE and melt the butter. Add the garlic and ginger, and cook until fragrant (about 1 minute).
- Add all of the spices, and the salt, stir, and cook for a minute. You might want to deglaze the pot at this point if the mixture is stuck to the bottom of the pot, just add a splash of water and scrape off any stuck bits with a wooden spoon. Then add the tomato sauce, and a ¼ cup of water. Switch off the sauté setting.
- Add the chicken thighs, give everything a mix.
- Secure the lid and set the vent to SEALING. Select the PRESSURE COOK/MANUAL setting and set the cooking time for 6 minutes at high pressure. The Instant Pot will take around 10 minutes to come to pressure and start cooking. When the cooking program ends, quickly release the steam.
- Carefully remove the lid, and press SAUTE. Stir in the cream and simmer for 5 to 10 minutes, until the sauce coats the back of a spoon. Taste and add salt if needed. Serve warm over rice with chopped parsley or cilantro.
Notes:
- Chicken thighs are more tender and flavorful, but chicken breasts also work. If using chicken breasts, pressure cook for 5 minutes.
- Passata can be replaced with tomato sauce or blended and strained canned tomatoes.
- Heavy cream gives the smoothest, richest sauce. Half-and-half or full-fat coconut milk can also be used, but the sauce will be a little less creamy. When I retested this recipe in March 2026, I used ¾ cup of heavy cream and preferred that, so I changed the recipe from 1 to ¾ cup.
- This dish has medium heat. For a milder version, leave out the chili powder.
- You can skip sautéing the garlic and ginger to save time, but the ginger may taste a little sharper.
- Do not add the cream before pressure cooking, or it may separate.
- If doubling the recipe, do not increase the cooking time.
- A burn message is not expected if the recipe is followed as written. If it happens, add ¼ cup water, scrape the bottom of the pot, and start again.
- For a sweeter sauce, add 1 teaspoon granulated sugar or brown sugar before pressure cooking.
- For a richer finish, stir in a little extra butter after cooking.
- Garnish with fresh cilantro, mint, or parsley, and serve with rice or naan.
- Store leftovers in the fridge for up to 3 to 4 days, or freeze for up to 3 months. Add a splash of water when reheating if the sauce has thickened.
- Makes 4 large servings or 6 medium servings.

how long to pressure cook if it’s bone in chicken thighs ?

Hi Shay, If I’m cooking bone-in chicken thighs in the instant pot, I cook for 10 minutes on high pressure, then allow for a 5 minute natural release before fully releasing the pressure. This recipe will work best with small pieces of chicken though, so you can consider removing the skin and bone from the thighs and dicing it into bite-sized pieces instead.

Pretty darned tasty. I substituted chicken breast cubed and used the coconut milk. Cream definitely tasted more authentic but I wanted to lower the calories. This will go into rotation!!

Do you Know if and how I could make this with frozen chicken breast?

You can use frozen chicken breasts. Add about 2-3 extra minutes of pressure cooking time and make sure the pieces are separated, not frozen together. The sauce may be slightly thinner, so you can simmer it on sauté mode at the end before adding the heavy cream if needed.

it smelled so good while it was cooking we were ravenous by the time it was done! I used chicken breast as that was what I had and it turned out great. I used to use a recipe that called for onion and no ginger but I like your version much better!
