Easy and quick cheesy and flavourful chicken fajita quesadillas, with a generous amount of grated cheese without all the extra calories.

I love international cuisines and have incorporated foods from all around the world in my regular menu. This includes a Mexican dish that became one of my favourites since the day I tried it for the first time when I was a child. The best thing about it was adding all the sauces to either chicken, meat or shrimp before wrapping it in a special bread, with sweet bell peppers, lots of melty cheese and enjoying all the wonderful flavours.

Although my Mexican friend keeps explaining to me that fajita is not Mexican but actually a Tex-Mex food, it somehow got imprinted in my mind that fajita is a Mexican dish. Moreover, every time we got invited to her place, she’d cook fajitas, quesadillas or arracheras. No matter the origin, they all taste so good.

I like experimenting with different recipes, so I make fajitas with different meats, I add various sauces, I change the spice mixes, and recently I even discovered a way to still add a generous amount of cheese to my fajitas but without the added fats and calories. And since I’m also a huge fan of quesadillas, so I thought why not combine both recipes and make one amazing dish?

But now, back to the cheese. I really love my fajitas and quesadillas with lots of cheese. This always counted for many extra calories. As I couldn’t sacrifice the cheese itself, I found a much better option to cut my calorie intake instead. I started using Weight Watchers Reduced Fat Grated Mature Cheese.

Making fajita quesadillas is very easy and quick. And with Weight Watchers Reduced Fat Grated Cheese, they turn out cheesy enough and very flavourful, just the way I like it but with no extra calories. I mean, think about all the melty cheese goodness!

So every 100g of this cheese contains only 214 calories without sacrificing the taste. Weight Watchers is all about nourishing your body and eating what your heart desires, without giving up the foods that you love. There’s a wide range of convenience foods and ready to eat meals, that are not only healthy but also taste great.

Weight Watchers also introduced a new SmartPoints system where every food and drink has a value. With this system, you get a personalised SmartPoints budget to spend on anything that you like. Now if you stick to your budget, you will lose weight and become closer to your goals! All of this can be done through an app that you can download on your smartphone, sounds easy right? So in short, with Weight Watchers you can still eat all the foods that you love. Their system pushes you towards nutritious and healthier foods, so that you eat better, feel better, have more energy and still lose weight! They also recently introduced a new look and feel packaging that makes it easier for shoppers to make healthier choices, by clearly showing SmartPoints value, calories, and nutritional values.

I’ve tried the Weight Watchers Mac n cheese, Cheese & Onion Quiche, Chicken Lasagne, Layered Fruit Berry Fromage Frais (a favourite!), Weight Watchers flavoured yogurts and many more. I’ve also tried different ingredients such as Reduced Fat Grated Mature Cheddar Cheese and Thick Sliced Wholemeal Bread. All of the products taste wonderful, and you would never guess that they are reduced in fat and are not loaded with all the calories, so there is no sacrifice with the taste! So next time you do your grocery shopping, make sure to check out Weight Watchers range.

Back to the recipe, this is very simple. All you need to make this recipe is onion, bell peppers, paprika, chicken breast, fajita spice mix, tortilla breads and grated cheddar cheese. Start by sautéing onion and bell peppers with some paprika, and set aside. Cook the chicken with fajita spice mix, and set aside. Wipe clean the skillet, then place a tortilla bread on the skillet. Sprinkle with cheese then peppers followed by the chicken, then sprinkle generously with cheese again. Finally, cover with another tortilla bread. Cook on medium heat for a minute or two or until the bottom tortilla is slightly browned. Flip over and let the other side brown. Transfer to a plate and using a pizza cutter slice each fajita-quesadilla into quarters. Serve warm and enjoy!
