Vegan Molten Chocolate mug cake that is ready in just 2 minutes. It’s decadent, smooth and absolutely heavenly! You won’t believe that this lava cake is made in the microwave.
Do you ever get these crazy chocolate cravings? Or molten chocolate cake cravings? I know I do, and when I need my quick fix I just make this seriously awesome microwave mug cake that literally takes a couple of minutes from start to finish! This molten chocolate cake is suitable for pregnant women as it doesn’t contain any eggs.
Chocolate Mug Cake
If you’ve never made a chocolate mug cake in the microwave then you’re seriously missing out. I remember when I first saw this idea on the internet a few years ago, and I thought a chocolate cake in a mug? huh? How does that even work? Turns out that making a chocolate cake is much easier then anyone can ever imagine.
I also have a hobby of turning our well-loved recipes into vegan recipes. And this is exactly what I’ve done to this chocolate mug cake recipe!
Vegan Chocolate Cake
I love vegan desserts. One of my favourites that you must try is this Vegan Chocolate Cake that bakes in the oven. The lava cake is a bit different, as it’s just sooo easy to make and can literally be ready in 2 minutes! The original recipe calls out for an egg and milk. However, I find it a bit difficult having to use HALF of an egg to make one portion of this molten chocolate mug cake. I mean, it’s a bit of a mess having to divide an egg into 2 halves. Plus, it’s not like I will ever use the other half of an egg anyway.
So the best substitute here that actually works is banana. You only need a little bit, I normally add 1/2 or 1/3 of a banana depending on the size of it. I would recommend using a very ripe banana if you having one sitting on your countertop.
How to Make Chocolate Lava Mug Cake
First of all, you need a mug! I’m sure that you have one, and I don’t really believe that using a specific shape of a mug can give you the best results. I usually go for a shallower mug that isn’t very tall just because it makes eating the cake much easier.
Simply start by mashing 1/2 or 1/3 of a banana.
Then add the rest of the ingredients.
To make this, I’ve used:
- banana
- flour
- sugar
- cacao powder
- milk
- vegetable oil
- baking powder
- ground cinnamon
Whisk all of the ingredients together with a fork until well combined.
Your batter is ready now and can go into the microwave. I usually cook this cake for 60 seconds on 700w. It is very important not to overcook your lava cake, as cooking it for too long in the microwave will result in an ordinary chocolate sponge cake.
Microwaves vary from one to another, so you will have to remove your mug cake from the microwave once the edges set and the center is still bit wet and shiny.

Vegan Molten Chocolate Mug Cake
Ingredients
- ½ banana
- 2 tablespoons all-purpose flour
- 1 tablespoon granulated sugar
- 1.5 tablespoons cacao powder
- 3 tablespoons milk of choice
- ½ teaspoon baking powder
- ½ teaspoon ground cinnamon
- 1 teaspoon vegetable oil
Instructions
- In a mug, mash the banana then add the rest of the ingredients and whisk together with a fork until well combined.
- Microwave on 700w for 60 seconds. It might be differe°nt from one microwave to another, but stop cooking when the edges set and the center is still a bit wet and shiny. If you over bake the batter, you will get just a regular chocolate cake.
Notes:
- If you don’t want to bake this molten cake in the microwave, you can just bake it in the oven for around 10 minutes on 200C.

It taste so good and it’s perfectly melted in the middle.
I tried a lot of recipes but this one is the best so far.
I substituted applesauce for banana.
I used a large tbs of xylitol instead of sugat
I added coconut ice cream on top.
