This easy homestyle chicken biryani recipe gives you tender chicken, fluffy rice, and beautiful layers without making the process feel intimidating. The chicken cooks first in a thick, spiced masala, then the rice steams on top so every serving has deep flavor and a mix of white, saffron-yellow, and masala-seasoned rice. It takes a little time, but the steps are simple and manageable in a regular home kitchen.


The Biryani That Inspired This Recipe
This is my homestyle version of a biryani that we had in Agra, India, during our trip to visit the Taj Mahal. It was my first time in India, and I came home even more in love with Indian food than I already was. Honestly, I would go back just for the food!
It’s not a strict regional biryani or an exact copy of that dish, but it is the version I wanted to make at home: fragrant, layered, deeply savory, and served with a cool minted yogurt on the side.

The homestyle recipe is made with marinated chicken, fluffy basmati rice, golden onions, herbs, saffron milk, and a thick masala that seasons the whole pot without making the rice heavy.
The Two Details That Matter Most
For me, the best parts of this layered dish are the rice and the fried onions, and both of these need to be texturally right.
The Rice Should Be Partially Cooked, Not Fully Cooked
You’ll see that we only boil the rice for about 4 minutes before layering it with the chicken. It should still feel firm in the center at this point, but it will finish steaming in the pot. If the rice is fully soft before it goes into the pot, it can turn mushy while the biryani steams.
Keep a Close Eye on the Onions
Once the onions start turning brown, stay close! They can go from golden to burnt in a minute. Pull them when they are deep golden, not black, because they will darken a little more after they come out of the oil.
Ingredients

- Skinless, bone-in chicken thighs stay tender and add flavor to the rice. If your store only has skin-on thighs, just remove the skin before marinating so the biryani does not turn greasy.
- Marinade ingredients: Warm spices, garlic, lemon, yogurt, and oil marinate the chicken perfectly in an hour or overnight. Save all of the marinade; it cooks down with the chicken into the masala that seasons the whole pot.

- Yellow Onions: Slice these thinly so that they cook quickly and evenly.
- Saffron: A traditional flavor in this dish, saffron can sometimes be difficult to find or outside of your budget. If you don’t have it, use a bit of ground turmeric instead to get a similar color.

How to Make Chicken Biryani
Marinate the Chicken and Prepare the Rice and Saffron Milk

Mix up the marinade in a large pot and add the chicken. Marinate in the fridge for at least 1 hour, and up to overnight. More marinating time equals more flavor.

Rinse the rice, soak it in cold water for 20-30 minutes, and drain well. Steep the saffron in warm milk for about 10 minutes. Stir in the melted ghee or butter after the saffron has steeped.
Fry the Onions

Fry the sliced onions in oil over medium to medium-high heat, stirring often.

Remove half of the onions to a plate for layering, and leave the remaining onions in the pot.
Cook the Chicken

Add the marinated chicken and all of the marinade (masala) into the pot with the onions. Cook for a few minutes on each side to lightly brown.

Cover and continue to cook over low heat for 20 minutes, turning the chicken over once or twice. The sauce will thicken. If it seems too dry, you can add a little bit of water.
Parboil the Rice

Boil water with aromatic spices and salt. Add the soaked rice, and boil for just 4 minutes, until the grains are about 70 percent cooked. You might notice that I add quite a bit of salt to the water. This is because the rice only cooks for a few minutes, so it won’t absorb all of it.
Many dum-style biryanis are sealed with dough to trap steam. I skip that extra step here and use a heavy pot with a tight-fitting lid. If your lid does not sit snugly, tuck a sheet of foil or parchment under it before steaming.
Layer and Steam

Add fresh herbs, reserved fried onions, and drained parboiled rice to the pot with the chicken, layering the rice in between layers of herbs and onions.

Cover tightly with a lid, using foil under the lid for a tighter seal if needed. Cook over low heat for 25 minutes.
Rest, Scoop, and Serve
Turn off the heat and allow the pot to rest for 10 minutes before you open it. This allows the rice to finish steaming perfectly.
How to Serve Chicken Biryani
When serving, scoop from the bottom and gently lift through the layers instead of stirring the whole pot together. Each plate will get some chicken, herbs, fried onions, and different colors of rice: Some white, some saffron-yellow, and some seasoned with the chicken masala.
I like to serve this with a side of minted cucumber yogurt (raita).
For a quick minted cucumber yogurt, mix 1 cup plain yogurt with 1 small peeled and grated cucumber, squeezed of excess water, 1 small grated garlic clove, ½ teaspoon ground cumin, salt to taste, and 2 tablespoons chopped fresh mint. It cools the spices and makes the biryani feel complete.
I added pomegranate arils to mine; they add such a fun bit of color and a touch of sweetness.

Storage and Reheating
Store leftover chicken biryani in an airtight container in the fridge for up to 4 days. Reheat individual portions in the microwave, covered, in 30-second intervals until hot, adding a small splash of water if the rice seems dry. Try not to stir it too much as it reheats so the rice stays fluffy.

Easy Homestyle Chicken Biryani
Equipment

- Large pot for boiling rice
- Foil or parchment paper, optional
Ingredients
For the Chicken Marinade
- 1 ½ pounds (680 g) bone-in, skinless chicken thighs patted dry
- 1 cup (240 g) plain full-fat yogurt
- 2 tablespoons (30 ml) fresh lemon juice
- 1 tablespoon (15 g) grated fresh ginger or ginger paste
- 1 tablespoon (15 g) minced fresh garlic or garlic paste
- 2 tablespoons (30 ml) avocado oil or vegetable oil
- 1 teaspoon (6 g) fine salt
- ½ teaspoon (1 g) ground turmeric
- 2 teaspoons (4 g) garam masala
- ½ teaspoon (1 g) ground cinnamon
- ½ teaspoon (1 g) ground coriander
- ½ teaspoon (1 g) ground green cardamom
- 1 teaspoon (2 g) ground cumin
- 1 teaspoon (2 g) Kashmiri chili powder or sweet paprika
- ¼ to ½ teaspoon cayenne pepper optional
For the Rice
- 2 cups (400 g) basmati rice
- 8 cups (1.9 L) water
- 1 ½ tablespoons (27 g) fine salt for the boiling water
- 1 cinnamon stick
- 2 dried bay leaves
- 4 whole cloves
- 6 green cardamom pods lightly cracked
- 1 green chili or serrano chili, sliced in half lengthwise
For the Saffron Milk
- 2 tablespoons (30 ml) warm milk
- 1 teaspoon loose saffron threads not packed
- 1 tablespoon (15 g) melted ghee or unsalted butter
For the Onions and Layering
- ¼ cup (60 ml) avocado oil or vegetable oil, plus more if needed
- 3 medium yellow onions thinly sliced
- ¼ cup (10 g) chopped fresh cilantro
- ¼ cup (10 g) chopped fresh mint optional but recommended
- pomegranate arils optional for serving
Instructions
Marinate the chicken
- In a large Dutch oven, mix the yogurt, lemon juice, ginger, garlic, oil, salt, turmeric, garam masala, cinnamon, coriander, cardamom, cumin, Kashmiri chili powder or sweet paprika, and cayenne if using.
- Add the chicken thighs and coat well in the marinade. Cover and refrigerate for at least 1 hour, or overnight for the best flavor.
Prepare the rice and saffron milk
- Rinse the basmati rice several times until the water runs mostly clear. Soak in cool water for 20 to 30 minutes, then drain well.
- Add the saffron threads to the warm milk and let them steep for at least 10 minutes. Stir in the melted ghee or unsalted butter.
Fry the onions
- While the chicken marinates or while it comes out of the fridge, heat the oil in a skillet over medium to medium-high heat.
- Add the sliced onions and cook, stirring often, until deep golden brown. Transfer to a paper towel-lined plate. Use about half of the fried onions for the chicken and save the rest for layering.
Cook the chicken
- Place the Dutch oven with the marinated chicken over medium-high heat. Add about half of the fried onions to the pot.
- Cook for 5 to 7 minutes, turning the chicken to coat it in the masala as the marinade begins to bubble and thicken.
- Reduce the heat to medium low, cover, and cook for 20 to 25 minutes. Turn the chicken once or twice, until it is mostly cooked and the sauce has thickened.
- If the masala looks dry, stir in ¼ cup (60 ml) water and simmer for 2 minutes. Turn the heat to low while you finish the rice.
Parboil the rice
- While the chicken cooks, bring 8 cups (1.9 L) water to a boil in a large pot. Add the salt, cinnamon stick, bay leaves, cloves, cracked cardamom pods, and sliced chili.
- Add the drained rice and boil for about 4 minutes, until the grains are about 70 percent cooked. The rice should be tender on the outside but still firm in the center.
- Drain the rice immediately. Discard the whole spices and chili if you prefer not to leave them in the biryani.
Layer and steam
- Sprinkle half of the cilantro, mint, and reserved fried onions over the chicken. Spread the drained rice evenly over the top.
- Sprinkle with the remaining cilantro, mint, and fried onions. Drizzle the saffron milk mixture evenly over the rice.
- Cover the pot tightly with a lid, using foil or parchment paper under the lid for a tighter seal if needed. Cook over low heat for 25 to 30 minutes.
- Turn off the heat and let the biryani rest, covered, for 10 minutes.
- To serve, scoop from the bottom and lift gently through the layers instead of stirring the whole pot together. This gives each serving chicken, masala, herbs, fried onions, and different colors of rice. Garnish with fresh mint and pomegranate arils if using.
Notes:
- Homestyle biryani: This is a homestyle chicken biryani, not a strict regional biryani.
- Chicken thighs: Bone-in chicken thighs stay tender and give the rice more flavor. Use skinless thighs so the biryani does not turn greasy.
- Marinating time: Marinate the chicken for at least 1 hour, or overnight for more flavor. Avoid marinating for more than 24 hours, as the texture can change.
- Kashmiri chili powder: This adds mild heat and a warm red color. Sweet paprika works as a substitute, and you can add cayenne for more heat.
- Saffron substitute: If saffron is not available, mix ¼ teaspoon ground turmeric into the warm milk instead. The color will be similar, but the flavor will be a little different.
- Salt for the rice: I use 27 g salt in the rice water because the rice only boils briefly before being drained. When tested with less salt, the finished rice tasted underseasoned.
- Rice texture: Boil the rice for about 4 minutes, until it is tender on the outside but still firm in the center. Drain it right away so it does not keep cooking in the hot water.
- Fried onions: The onions should be deep golden brown, not black. Once they start turning golden, watch them closely because they can go from golden to burnt quickly.
- Chicken masala: Before layering, the chicken should have a thick sauce in the pot. If the masala looks dry, add ¼ cup water and simmer briefly.
- Best pot to use: Use an enameled Dutch oven or another nonreactive pot. If using bare cast iron or aluminum, marinate the chicken in a glass or stainless steel bowl, then transfer it to the pot for cooking.
- Serving: Serve warm with cucumber raita or plain yogurt, lemon wedges, and extra cilantro.
- Food safety: Chicken is safe to eat when it reaches 165°F near the bone. Bone-in chicken thighs are often more tender when cooked to 175°F to 185°F.
