Sweet Potato Brownies
Easy sweet potato brownies decorated with white chocolate for Halloween to make Mummy brownies.

- 90 grams unsalted butter cubed
- 90 grams milk chocolate
- 300 grams sweet potatoes
- 90 grams granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 90 grams all purpose flour
- 1 tsp baking powder
- 1 tbsp cacao powder
- 100 grams white chocolate
- 18 edible eyes
Preheat oven to 180c, and grease a 20cm square brownie pan.
Boil sweet potato chunks in water, until they're cooked and soft. And then mash them using a potato masher.
In the microwave, melt the butter with the chocolate.
In a bowl, add sweet potato mash, eggs, vanilla extract with sugar and butter chocolate mixture. Beat until smooth.
Sift in flour, baking powder and cacao powder. Mix well.
Pour mixture into brownie pan, and smooth out the top.
Bake for 20-25 minutes. Make sure not to over bake the brownies, remove from oven when mixture is still soft in the middle.
When brownies cool down, remove from pan and cut into 9 squares.
To decorate for Halloween, melt the white chocolate in the microwave and place in a ziplock bag. Cut the corner of the bag, and pipe out back and forth in a zig zag motion to create Mummies.
Decorate with edible eyes, and place in the fridge for the chocolate to set.
