Useful Bread Machine Tips

  • Add ingredients in the right order: Most machines need liquids first, then dry ingredients, with yeast added last on top of the flour. Some machines have a separate yeast compartment that releases it at the right time.
  • Use the right kind of yeast: I use Fleischmann’s Bread Machine Yeast. It’s an instant yeast that works well in machines and doesn’t need to be dissolved in water. Active dry yeast is different and may not rise the same if swapped.
  • Use bread flour when the recipe calls for it: Bread flour has higher protein than all-purpose which helps the dough rise better and gives a chewier texture. All-purpose flour still works in many recipes but may result in a softer loaf.
  • Do not open the lid during the rise or bake cycle: You can check during kneading to see if the dough looks smooth and not too sticky or dry but keep the lid closed after that so the bread rises properly.
  • Remove the paddle before the final rise: Once kneading and the first rise are done you can carefully remove the paddle and reshape the dough. This helps avoid a large hole in the bottom of your baked loaf.
  • Use the dough cycle when shaping by hand: The dough cycle is helpful when you want the machine to mix and rise the dough but prefer to shape and bake it in the oven yourself like for pizza or buns.
  • Take the bread out right after baking: Leaving the bread inside the machine after it finishes baking traps steam which softens the crust and can make it soggy.
  • Weigh your flour if you can: Measuring by weight is more accurate and helps avoid problems like dense or dry bread. Too much flour is one of the most common issues in bread machine baking.
