Add the oats, raisins, peanuts, and coconut to a food processor and pulse a few times, but not so much that the mixture is completely powdered. You should still have visible pieces of everything.

Whisk together the peanut butter, honey, vanilla, cinnamon, and salt in a large mixing bowl.

Add the dry mixture to the wet mixture and stir until well combined. Stir in the mini chocolate chips, cover, and refrigerate for at least 20 minutes to firm up.

Use a 2-tablespoon cookie scoop to portion out the dough. Use your hands to roll each portion into a smooth ball.
