chicken breasts - breadcrumbs - mozzarella - eggs - flour - Italian seasoning - parmesan - basil - marinara - vegetable oil
Set up three dishes. Mix flour, salt and pepper in one dish. Beat the eggs until frothy for the second dish. In the third dish, combine breadcrumbs with parmesan and Italian seasoning.
Coat each chicken cutlet in flour, then dip in egg and dredge in breadcrumbs. In a skillet, heat oil, and fry the chicken until fully cooked. Remove onto a sheet pan.
Divide the marinara sauce among the cutlets, spooning it on top of the chicken. Top each cutlet with shredded mozzarella cheese and bake for 8-10 minutes.
Switch the oven to broil, and broil until cheese starts to crisp. Remove from the oven, and garnish with fresh basil. Serve with buttered noodles and extra marinara sauce.
