This Air Fryer chicken and broccoli dinner is so light and healthy! It's also really quick and easy to make, which makes it the perfect dinner for busy weeknights!
1 lb (450g)2-3 mediumchicken breastscut into 1-inch pieces
1teaspoonsoilpeanut, vegetable, or canola
7oz(200g)broccoli floretsabout 2 cups, cut into small bite size pieces
1cupmushroomssliced 3 mm/ ⅛" thick

2teaspoonssesame oil
1tablespoonsoy sauceall-purpose or light
1teaspoonsriracha or hot sauce

Instructions
Preheat the Air Fryer to 400°F (205°C).
In a large mix bowl, toss the chicken with broccoli, mushrooms, and seasonings to combine.
Add the chicken and vegetables to the preheated Air Fryer, and cook for 10 minutes flipping halfway through. The chicken is ready when it's slightly charred.

If your Air Fryer basket is small, cook the chicken and vegetables in batches as overcrowding the basket will result in steamed chicken and vegetables and they won't char.
This recipe makes 2-3 generous portions.

To make a sauce (optional): After air frying, you can make a sauce to toss the chicken and vegetables in. Here's how you make it: double the marinade amounts, take half of it and mix with ¼ cup of water and 1 tablespoon of cornstarch. Then in a small saucepan on the stovetop, simmer the sauce until it thickens. Toss the Air Fryer chicken and broccoli in the sauce and serve over rice.
