*Optional* only do this step if you're planning to consume the za'atar within 2 months. Add extra virgin olive oil to the dried oregano, and rub the mixture between your hands. This will make the mixture less dry, and gives it a wonderful flavor.
In a large bowl, combine dried ground oregano, toasted sesame seeds, sumac, cumin, and salt. Stir well to combine and store in a sealed jar.
- To toast sesame seeds: Heat a dry skillet or pan over medium-high heat. Once the pan is hot, add the sesame seeds to the pan. Use a spatula to stir the sesame seeds constantly as they cook to toast them evenly (do not walk away). Toast the sesame seeds for about 2-3 minutes or until they turn a golden brown color and become fragrant (be careful not to burn them). Once the sesame seeds are toasted, remove them from the heat and transfer them to a bowl or plate to cool before adding to your za'atar blend.
