Za’atar Spice Recipe

Authentic Middle Eastern za'atar blend made with dried oregano, tangy sumac, toasted sesame seeds, cumin, and salt. Perfect for adding flavor to dips, bread, baked goods, and grilled meats.

Ingredients

  • ¾ cup dried ground oregano or sub 50% oregano and 50% thyme
  • 2 tablespoons extra virgin olive oil optional
  • ½ cup toasted sesame seeds
  • ½ cup sumac
  • 1 tablespoon ground cumin optional
  • 2 teaspoons salt

Instructions

  • *Optional* only do this step if you're planning to consume the za'atar within 2 months. Add extra virgin olive oil to the dried oregano, and rub the mixture between your hands. This will make the mixture less dry, and gives it a wonderful flavor.
  • In a large bowl, combine dried ground oregano, toasted sesame seeds, sumac, cumin, and salt. Stir well to combine and store in a sealed jar.

Notes

  • To toast sesame seeds: Heat a dry skillet or pan over medium-high heat. Once the pan is hot, add the sesame seeds to the pan. Use a spatula to stir the sesame seeds constantly as they cook to toast them evenly (do not walk away). Toast the sesame seeds for about 2-3 minutes or until they turn a golden brown color and become fragrant (be careful not to burn them). Once the sesame seeds are toasted, remove them from the heat and transfer them to a bowl or plate to cool before adding to your za'atar blend.
