Ingredients

  • 1 pound (450g) chicken tenders they're called mini chicken fillets in the UK
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions

  • In a large mixing bowl, add the marinade ingredients and whisk until they're well combined. Add the chicken tenders, and mix until they're well coated in the marinade. Cover with plastic wrap, and marinate in the fridge for at least 30 minutes and up to 8 hours.
  • To grill the chicken tenders, place on a preheated grill or grill pan and cook for 3-5 minutes on each side until they're cooked through. Total of 8-10 minutes depending on the size of the chicken tenders.
  • Remove from the grill, and allow the chicken tenders to rest for a few minutes before serving.

Notes

  • The best way to check the doneness of the chicken is by inserting a kitchen thermometer in the center of the chicken piece, and the internal temperature of the chicken should read 165F or 75C.
  • Serve these grilled chicken tenders with a simple salad, pasta, in tacos, rice, or in sandwiches.
