Peanut Butter Pretzel Bites

Easy chocolate covered peanut butter pretzel bites are sweet, salty, creamy, and crunchy!

Ingredients

  • 1⅓ cup creamy peanut butter
  • ½ cup salted butter softened
  • 1 teaspoons pure vanilla extract
  • cups powdered sugar
  • 200 Snaps square pretzels
  • 20 ounces chocolate melting wafers
  • Sea Salt optional
  • Sprinkles optional

Instructions

  • In a medium mixing bowl, combine the softened butter with peanut butter and beat together using a hand mixer until smooth and creamy.
  • Then gradually add sifted powdered sugar, and slowly mix that in to avoid a sugar storm. Keep adding powdered sugar and beat until you get a mixture that sticks together but it's not too sticky. If it's still sticky, add an additional half a cup of sugar and beat again.
  • Cover with plastic wrap, and chill the mixture in the fridge for 30 minutes.
  • Line 2 half sheet size cookie sheets with parchment paper (we won't be baking these!), and lay 100 pretzels over them.
  • Remove the peanut butter mixture from the fridge and using a medium cookie scoop, portion out the mixture then divide each into 4 portions. Roll each between your hands to make small balls, and top each pretzel with a ball of peanut butter. Cover with another pretzel and gently press with your finger to secure. Repeat with the remaining pretzels to make peanut butter pretzel sandwiches.
  • In a microwave-safe bowl, melt the chocolate for 1 minute, stir, then microwave at 30-second intervals, stirring after each one until smooth.
  • Dip the pretzel bites halfway in the chocolate and place them back on the parchment paper to set.

Notes

  • Peanut Butter: I tested this recipe using JIF all-natural peanut butter, but keep in mind that peanut butter brands are a little different so you might need more or less powdered sugar to make the mixture. It should feel like a soft fudge.
  • You can easily halve or even quarter the recipe. I like to make a large batch and these never last in my house.
  • Easy Clean-Up. Make sure to line your cookie sheets with parchment paper, these will make cleaning up a breeze!
