Ingredients

  • ¾ cup Italian breadcrumbs
  • ½ cup milk
  • 2 eggs
  • 2 pounds (900g) ground beef 80/20
  • 1 medium yellow onion finely chopped or grated
  • 3 cloves garlic minced finely or pressed
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons ketchup
  • 2 tablespoons chopped fresh parsley optional
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

For the glaze:

  • ½ cup ketchup
  • ½ cup chili sauce
  • 2 tablespoons brown sugar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt

Instructions

  • Preheat the oven to 375°F/190°C, line a baking sheet with foil or parchment paper, and spray it with cooking spray.
  • In a large bowl, combine breadcrumbs with milk and eggs. Allow to sit for 5-10 minutes.
  • Add the rest of the ingredients and mix until just combined, do not over mix.
  • Shape the meat into a 8x4 inch loaf and compress it to hold its shape, and place it on the prepared baking sheet (or shape it over the baking sheet). You can also use a loaf pan for this.
  • Bake uncovered for 40 minutes.
  • Meanwhile, in a small bowl combine the glaze ingredients. Mix until well combined.
  • Using a brush, spread the glaze over the meatloaf, and bake for 15 more minutes or until it’s fully cooked. The internal temp must reach 160°F/71°C.
  • Allow the meatloaf to rest for 10 minutes before slicing. Serve over mashed potatoes, and steamed broccoli or green beans.

Notes

Don’t Overmix the meat mixture! Mix everything together gently, just until combined. This will help the meat retain its texture and stay juicy and delicious.
