One Pot Pasta

Easy 15-minute one pot pasta made with very basic ingredients! It's simple, frugal and delicious!

Equipment

  • A wide pot or pan

Ingredients

  • 1 pound (450 g) dried pasta
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 large tomato
  • 1 chili optional
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • ½ teaspoon dried basil
  • 1 tablespoon (15 ml) olive oil
  • 4 cups (1 liter) vegetable stock
  • Salt & pepper to taste

Instructions

  • Start by dicing an onion and slicing 2 garlic cloves. Dice the tomato and finely chop a chili if using.
  • In a wide pot or pan, place all of the ingredients and turn on the heat. You have to make sure that the pasta is fully covered with the liquid.
  • Cover with the lid, and let it cook for 8 minutes. Stir the pasta every 2 minutes. Then cook uncovered until the pasta is al dente and the sauce has thickened. You might need to add a little bit of more stock or hot water if the sauce is too thick.
  • Garnish with chopped parsley or basil leaves, and more salt and pepper if desired.

Notes

  • You can use any shape of dried pasta for this recipe.
