Fig and Lemon Cake

Ingredients

  • 1 cup all purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 3 tbsp butter
  • ½ cup granulated sugar
  • 1 large egg
  • 1 lime zested
  • 2 tsp pure vanilla extract
  • ½ cup yogurt
  • 9 figs halved (fresh)

Instructions

  • In a medium sized mixing bowl cream together sugar and butter until light and fluffy.
  • Add egg and mix, mix in lime zest and vanilla powder.
  • Mix in flour, baking soda, and baking powder, as well as the natural yogurt until just combined. Do not over mix.
  • Pour batter into a greased baking dish, and spread the batter really well.
  • Push the fig halves into the batter creating a pretty pattern.
  • Bake on 180c for 40 minutes or until a tooth pick comes out clean.
