Superfood Energy Balls

pitted medjool dates
Start by placing the oats, the dates and the coconut oil in a food processor. Blend for 1 minute or until a dough like mixture starts forming.
Add peanut butter, and blend for one more minute.
Add goji berries and chia seeds, and blend for 15-20 seconds for the berries and seeds to be distributed throughout the mixture.
Use your hands to roll the mixture into little balls. The energy balls can be consumed at this stage, but I prefer to place them in the fridge to let them harden a little.
Store in a container or a freezer bag either in the fridge or in the freezer for up to 3 months.
