Grilled Shrimp Skewers
Fun grilled summer recipe of marinated shrimps threaded on skewers and then cooked on the grill to perfection.

- 600 grams shrimps
- 100 grams cherry tomatoes
- 2 tbsp olive oil
- juice of half a lemon
- 1 tsp paprika
- 1/2 tsp crushed red chilli
- 1 tsp garlic paste or crushed garlic
- 1/4 cup parsley finely chopped
- 1/2 tsp sugar
- 1/2 tsp salt
- 1 tsp apple vinegar
- bamboo skewers
If using frozen shrimps, then take the shrimps out of the freezer and thaw.
To make the marinade: In a small bowl, combine all ingredients excluding shrimp and cherry tomatoes. Mix until well combined.
When shrimps are defrosted, marinate them in the marinade for at least 15 minutes and up to 2 hours. Either in a bowl, or in a sealed ziploc bag.
Thread shrimps on wooden skewers with the cherry tomatoes.
Preheat the grill, and cook on both sides until shrimps are cooked through (2-3 minutes on each side). This shouldn't take more than 5 minutes.
