Grilled Shrimp Skewers

Fun grilled summer recipe of marinated shrimps threaded on skewers and then cooked on the grill to perfection.

Ingredients

  • 600 grams shrimps
  • 100 grams cherry tomatoes
  • 2 tbsp olive oil
  • juice of half a lemon
  • 1 tsp paprika
  • 1/2 tsp crushed red chilli
  • 1 tsp garlic paste or crushed garlic
  • 1/4 cup parsley finely chopped
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • 1 tsp apple vinegar
  • bamboo skewers

Instructions

  • If using frozen shrimps, then take the shrimps out of the freezer and thaw.
  • To make the marinade: In a small bowl, combine all ingredients excluding shrimp and cherry tomatoes. Mix until well combined.
  • When shrimps are defrosted, marinate them in the marinade for at least 15 minutes and up to 2 hours. Either in a bowl, or in a sealed ziploc bag.
  • Thread shrimps on wooden skewers with the cherry tomatoes.
  • Preheat the grill, and cook on both sides until shrimps are cooked through (2-3 minutes on each side). This shouldn't take more than 5 minutes.
