How to Spatchcock and Roast a chicken

Here's a step-by-step guide on how to spatchcock a chicken. Seasoned with just salt & pepper

It’s a basic cooking skill that every home cook should learn and utilize!

Using kitchen shears cut along one side of the backbone

Cut along the other side of the backbone to completely remove it.

Turn the chicken over, and press down on the chicken breast with force until you hear the breast bone cracking.

Tuck the wings, and season the chicken with salt & pepper.

Preheat the oven and a pan inside it at 425°F/220°C for 20-30 minutes. Add oil to the pan and place the chicken breast side down

Roast the chicken for 40-50 minutes rotating the pan and flipping the chicken once.

Carve, slice and serve over mashed potatoes and a salad.
