STEWED AUBERGINE OR STEWED EGGPLANT
Aubergine or eggplant is one of my all-time favourite vegetables! Growing up I was a picky eater and refused to even taste aubergine. And thinking about it now, I’ve really missed out on something really amazing all of these years until I somehow decided to give aubergines a chance and ended up falling in love with this vegetable.
Aubergines are very versatile, and there are so many things that you can make with aubergine. But my current favourite recipe is this extremely simple and easy 3 ingredient stewed aubergine with tomato and garlic.
I love the simplicity of the dish, and the fact that I make this in just 10 minutes. It makes a great side dish, but to be honest I usually eat it as a main with some freshly baked bread on the side. BEST FOOD EVER!
HOW TO MAKE STEWED AUBERGINE WITH TOMATO
To make this, you only need 3 ingredients if you don’t count the salt and the oil for sauteeing the veggies.
In a frying pan, heat some vegetable oil and saute peeled aubergine cubes. Cook until the cubes start to brown, then add a diced tomato, a couple of crushed garlic cloves and some water. Cover with lid, lower the heat and cook for a few minutes. Sprinkle with fresh chopped parsley and serve with warm bread.
What I really love about this recipe is the texture of the aubergine, the way it’s cooked makes it so perfect to be eaten with freshly baked pita bread. I also make this to add in my buddha bowls, it makes a great addition to any buddha bowl along with mashed potatoes or rice and a salad.

- 1 large Aubergine/Eggplant peeled and cubed
- 2 Tomatoes diced
- 2 cloves Garlic crushed
- 1/2 tsp Salt
