Grilled baby new potatoes and chicken, the perfect summer food for an outdoor barbecue!
Looking at our British summer, we either get rainy days when it’s difficult to get outside, or really hot days when we just can’t stay in. Today was one of the hottest days of the year! The heat in the house was unbearable, so we decided that today was the perfect day for an outdoor summer BBQ. Grilling meat, chicken and veg while watching the kids run through the sprinkler over and over again!
My 4-year old son really enjoys BBQs, he finds it an exciting activity to do as a family all together. He really enjoys helping out with the coal, preparing the grill and threading marinated meat, chicken and veg on skewers. And his favourite part is putting the food on the grill and having (according to my son) the most amazing food ever!
So for today’s BBQ, I decided to grill some lovely potatoes that I got from Sainsbury’s last week. Best decision ever. I realised that no BBQ is complete without having delicious grilled potatoes, especially if the potatoes are small, sort of sweet, with thin skin and creamy texture. I’m talking about Sainsbury’s British Gems Baby New Potatoes here. These potatoes make the meal my kids eat “complete”. All kids love potatoes, they’re delicious, healthy and filling.
I believe that potatoes are the real superfoods, as they contain more nutrients, vitamins and minerals than many “Superfoods” combined. A recent study by The Potato Council discovered that eating potatoes twice a day can lower blood pressure, and that the perception that people have about potatoes being fattening is not true. According to Sigrid Gibson (an independent nutritionist and data analyst), potatoes make a more significant contribution to our diets with potassium if compared to bananas. Potatoes are never forgotten in our house, we love potatoes and always enjoy them in different delicious recipes.
So I’m sharing with you a lovely potato kabobs recipe (that we had earlier today!). Instead of just having BBQ-ed meats and veg such as onions, tomatoes, courgettes and mushrooms, we also grilled the lovely British Gems Baby New Potatoes that we get from Sainsbury’s. This is quite easy, what we usually do is drizzle the potatoes with some oil, add a bit of salt and pepper (if desired), thread them on skewers and grill on their own or along with chicken or meat. What I also really like to do is to add crushed garlic, lemon juice and zest to the olive oil with salt and pepper, and the result is irresistible. Trust me, you won’t be able to eat just one or two!
We ended up eating everything. The potatoes were soft and tasty, they were eaten first before the chicken. Not a single bite had been left and everyone was happy. Especially my 4-year old son who ended up eating more potatoes than anything else. Give this recipe a try next time you go out for a BBQ and enjoy!
Potato Chicken Kabobs
- 1/2 kg Baby New Potatoes
- 1/2 kg chicken cubed
- 2 tbsp pesto
- cherry tomatoes
- 2 cloves of garlic crushed
- 2 tbsp olive oil
- juice of half of a lemon
- 2 tsp lemon zest
- black ground pepper
- Marinate chicken in pesto for at least half an hour.
- Boil potatoes in salted water until just soft and drain.
- In a bowl place olive oil, with garlic, lemon juice, lemon zest, black pepper & salt. Toss potatoes in mixture to coat.
- Thread the cooked potatoes and the chicken alternatively on skewers.
- Grill over medium heat until golden and crispy (about 10 minutes). Sprinkle with sea salt and serve.
