A super easy hearty soup made with very simply ingredients!
I’m very excited to share this super simple soup recipe with you today! It’s very easy to make, it’s ready in 20 minutes, it’s healthy, made with cheap ingredients, and it’s very tasty!
The weather is getting really cold, and the winds are so harsh and terrible. In this weather all I want to do is snuggle under the blankets in front of the lit fireplace, and eat a good warming soup!
So yesterday me and my Mum started experimenting with the Optimum ThermoCook! Your professional kitchen assistant! And we ended up making 3 soups! Yes 3 soups in one day! The first one was the potato carrot soup (this recipe!), the second one was Russian Shchi soup (cabbage soup), and the last one was my Middle Eastern Lentil soup! The reason why we made so many soups, is because 1. The ThermoCook chops the veggies, sautés the onions, and cooks the soup for you (I’m very impressed by it!) 2. We love soups and can eat a huge bowl of soup as a main dish 3. They were very delicious we couldn’t stop! 4. We’re a big family, 8 of us ate at my parents house yesterday + a friend of mine that came over!
Now I’m going to tell you a little about my Optimum ThermoCook, the reason why I love it is not because I don’t know how to cook, but because it makes life so much easier!
It basically can chop fruits and veggies, it makes smoothie, jams, sauces, porridge, soups, rice (steamed and boiled!), purees, baby food, hot drinks, it can mill coffee, mince meat, crush ice, whip cream and egg whites, it stirs, preheats food, boils water, kneads dough, sautés, steams, and makes stews. I still haven’t tried all of the functions out, but with what I’ve made so far, all I can say is that I’m very very impressed!
It also comes with a very lovely recipe book that is full of different ideas, and I will be posting more recipes on my blog for you to enjoy.
I made this soup from an onion, 2 potatoes, and 2 carrots. First, Chop the onion into 2-4 pieces, and throw it in the ThermoCook jug, then choose the “Chop” option and 30 seconds. I then scrape the chopped onions down from the sides of the jug with a rubber spatula, and add some vegetable oil. Then let it sauté for 5 minutes by choose the “Sauté” option, I love the fact that the blade will keep stirring the chopped onion so it does not burn. Then peel and chop the potatoes and the carrots, and add them to the onion. Add 1 Litre of water, chicken stock cube, 1/4 tsp ground black pepper, 1/4 tsp bharat, and 1/4 tsp salt. Choose “Quick soup option” and wait for 15 minutes. It will chop the veggies a bit more, and cook the soup for you like magic, and it will also keep stirring the soup for you while cooking.
If you wish to puree the soup like I did, pulse for a minute. And enjoy! We served this with some home-made onion bread that I baked the day before with my brother!

Potato Carrot Soup
- 1 onion
- 3 tsp vegetable oil
- 2 carrots
- 2 potatoes
- chicken stock cube optional
- 1/4 tsp ground black pepper
- 1/4 tsp bharat
- 1/4 tsp salt
- 1 L water
- Chop the onion into 2-4 pieces, and throw it in the ThermoCook jug, then choose the "Chop" option and 30 seconds.
- Scrape down the chopped onions from the sides of the jug with a rubber spatula, and add some vegetable oil.
- Sauté for 5 minutes by choose the "Sauté" option.
- Peel and chop the potatoes and the carrots, and add them to the onion.
- Add 1 Litre of water, chicken stock cube, ground black pepper, bharat, and salt.
- Choose "Quick soup option" and wait for 15 minutes until it finishes cooking.
