Refreshing Pimm’s ice lollies with fresh fruits & cucumber slices!
These boozy ice lollies are perfect for the hot summer days! I always have a dozen of them in my freezer, and take one whenever I feel like I need something cold and refreshing.
The idea came to me at the begging of this summer, when the weather was really hot and I started making a lot of ice lollies with different flavours. We were also having a lot of Pimm’s cocktails, so I figured why not make Pimm’s ice lollies?
Now I know that these are not suitable for kids, but being a huge fan of Pimm’s I can’t resist these ice lollies! They are great for summer parties when friends and family come over, we sit outside, get some vitamin D and enjoy these refreshing ice lollies!

Pimm's Ice Lollies
- 1/4 cup Pimm's
- 2 cups soda/Sprite
- 2 strawberries sliced
- 1 small cucumber sliced
- 1/2 peach sliced
- Juice of half an orange
In a jug mix all of the ingredients together, pour into ice lolly moulds.
Freeze for at least 4 hours.
