A refreshing mint matcha green tea ice cream made with 100% natural and pure matcha…
Two days ago I had a friend coming over who happens to be a huge fan of matcha! And knowing that, I have decided to make some Matcha ice cream. Summer is almost here, the sun is finally shining and I’ve been in the mood for summer cocktails, light fruity desserts, and lots of ice cream!
Matcha green tea isn’t exactly a powder version of the green tea that you drink at home. If you take some green tea and grind it, it won’t turn out to be the same thing. Japanese Matcha is made from shade-grown tea leaves that are grown for 3 weeks before harvest, and the stems and veins are removed when processing.
I chose to add Mint matcha to my ice cream as it adds a refreshing flavour, although plain matcha is as wonderful but mint matcha is definitely my favourite! I also love to have a mint matcha hot drink in the morning, for some reason, it helps me wake up and start my day!
Now let me tell you about the benefits of matcha, it’s actually really good for you as it boosts your metabolism, increases your energy levels, and contains a high concentrate of antioxidants. It also fights cancer, helps burn fat, and finally, it calms the mind and relaxes the body. Do you need more reasons to start incorporating matcha in your diet?
Anyway, my friend really enjoyed the ice cream and asked for the recipe, so here I am sharing the simple and easy recipe with my readers for this wonderful treat!
I used powdered sugar to sweeten my recipe, but if you would like to make a healthier version, you can, of course, substitute the sugar with stevia or honey! If you’re feeling a bit adventurous and don’t really care about the calories, add some condensed milk! The taste will be spectacular!
What is your favourite way to have matcha?

Ingredients
- 2 cups heavy whipping cream
- 1 1/2 tbsp Pure Chimp mint matcha
- 4 tbsp powdered sugar or honey
- Strawberries
Instructions
- In a bowl whip the cream until fluffy.
- Add the matcha and the sugar (or honey), and mix well.
- Transfer to a container, and freeze for at least 3 hours.
- Serve with strawberries on the side.

Such a beautiful vibrant colour from a natural product. It looks delicious – I’d probably end up eating most of it in the whipped state before freezing it mind you 😉
I almost did the same, but some of it made it to the freezer as I needed the pictures to post the recipe 😉
Oh, my oh my. I loooooooove the vibrant colour of your ice cream and it is totally healthy to eat this being that it is made with matcha :D.
