I’m a big fan of eggplants/aubergines. Actually, I’m obsessed with eggplants. This Mtabbal eggplant dip is one of my all-time favourite foods after hummus of course! I’m so obsessed with eggplants that I even made an eggplant cinnamon jam, and yes it tastes absolutely amazing and not weird at all!
I’ve been really enjoying eggplant base pizzas lately. As much as I love the old-fashioned starchy pizza dough, sometimes an eggplant pizza crust feels much lighter and guilt free. And to make life even easier, I decided to experiment with eggplant pizza bites by leaving the eggplants slices as they are and topping them with awesome pizza toppings.
This recipe is also low carb and packed with a lot of nutrients. Now if you’re looking to lose some weight, then you could swap the mozzarella with parmesan or even grilled tofu.
This eggplant pizza recipe is so easy to make and can be ready in as little as half an hour.
HOW TO MAKE EGGPLANT PIZZA BITES
Start by washing and slicing up your eggplant in circles. Eggplants normally have a bitter taste, so you will want to get rid off that to make sure that your pizzas aren’t bitter. To do that, add sea salt the sliced eggplant and leave them for 10-15 minutes.
The eggplant will release juices and that’s how the bitters will be removed. Wash the eggplant slices, and pat dry with kitchen towel paper.
Lightly grease a sheet pan, and lay the eggplant slices apart.
Take a crushed garlic and scatter it all over your eggplant pizza crusts. Also feel free to add any herbs that you like, I usually add thyme and/or basil, and ground black pepper.
Then generously add pizza sauce or tomato paste, followed by shredded mozzarella cheese. As I mentioned above, you could substitute that with parmesan, or grilled tofu. For a vegan version, sprinkle with nutritional yeast.
Bake in the oven at 180c for 15-20 minutes. The crusts will become sort of soft and the cheese will melt.
Finally, take our the eggplant mini pizzas out of the oven and enjoy!
Kids love these eggplant pizzas, they’re also great for lunchboxes and make awesome party food.
EGGPLANT PIZZA TOPPINGS
Eggplant Pizza Bites
- 1 eggplant
- 2 tbsp olive oil
- 1 clove garlic
- 1/2 tsp rosemary
- 1/2 tsp thyme
- 85 grams tomato paste or pizza sauce
- 110 grams mozzarella shredded
- Cut the eggplant into 1cm slices, sprinkle with salt and olive oil.
- Place on a greased pan and bake onÂ 220Â° c for 15 minutes or until they’re slightly soft and roasted.
- Top the eggplant slices with homemade tomato sauce, cheese, herbs, and anything that you like.
- Bake for 5 more minutes.
