Courgette ribbon salad with fresh mint leaves and almonds!
This is the kind of salad that I like to have on hot summer days. It sort of helps me cool down, I think that the secret is in the mint leaves and the lemon juice, but I also love the thin grilled courgette ribbons and the cherry tomatoes in this salad.
When the weather is hot outside, I like to eat cold and light salads. Hot food doesn’t go well with hot weather, so I tend to eat a lot of refreshing salads. So this is basically what I have been eating for the past week, these are like the hottest days of the year and all I want to do is drink cold drinks and eats lots of ice lollies. So when it comes to food, I’ve been having fun in the kitchen creating new salad recipes, and this recipe is one of them!
This salad is classy and comes together in just 10 minutes, I mean look at how beautiful these ribbons are! You can also add quinoa to make it more filling, and it makes a great side dish to your lunch meal or dinner. The courgette ribbons are very easy to make, using a vegetable peeler make thin and long slices – which means that the courgette core isn’t going to waste! And simply throw the ribbons on the grill for a couple of minutes (I like to slightly grease the grill plates before grilling the courgette ribbons).
Now if you ask me what’s so special about this salad, it’s definitely the combination of the fresh mint leaves, grilled courgette ribbons, cherry tomatoes, lemon juice and sliced almonds! Trust me, this salad is unbeatable!

- Using a vegetable peeler make thin and long courgette slices.
- Throw the courgette ribbons on the grill for a couple of minutes (I like to slightly grease the grill plates before grilling the courgette ribbons). They cook quickly so keep an eye on them.
- Mix the courgette ribbons along with the rest of the ingredients in a medium bowl, and top with sliced almonds. Enjoy!
