If you have been following my blog or Instagram for some time now, you’ll know that I travel quite often. I really enjoy travelling as I get to learn about new places, cultures and the food. Every time I visit a new country, I try to enjoy their traditional food as much as possible. I also try to learn more about the ingredients that they use, and how the food is being prepared.
I’ve been to North America, most countries in Europe, the Middle East, as well as a couple of countries in the Far East. I’m yet to visit South America though. Ever since I was a kid, I’ve wanted to visit Brazil (I probably watched too many Brazilian TV shows when I was little), and Brazil is definitely on my list to visit. This recipe that I’m sharing with you today is a Brazilian-inspired salad with the most delicious combination of mango, orange, spinach, and canned mackerel in pineapple and lime sauce.
Not only this recipe is super delicious, but it’s also healthy and very easy to make. It is low in calories, thus will help you to keep up with your health related New Year’s resolutions, and contains a lot of things that are good for you.
This mackerel superfood salad is made with Princes Mackerel Fillets in a Brazilian Style Sauce, this is a limited edition product of mackerel fillets that come in a hot and vibrant sauce with Pineapple and Lime. Sweet mango chunks nicely blend together with baby spinach leaves that are full of iron which is important to maintain good health of our bodies. Add to cooked quinoa and burgul, with a hint of fresh orange and top with mixed seeds.
Almost complete and ready to be served, I add the canned mackerel fillets on top to be the star of this dish. Mackerel gives a delicious and unique taste for this salad. It also adds the health elements to this dish, as Mackerel is full of proteins and Omega 3, necessary for the body and the brain. Mackerel is richer in Omega 3 than salmon or herring, and Princes offers a great range of mackerel in different lovely sauces.
Brazilian Mango Mackerel Salad
- 2 cups Baby spinach leaves
- 1 can mackerel
- 1 mango cubed
- 1 orange chunks
- 1/2 cup red and white quinoa cooked
- 1/4 cup bulgur cooked
- 1 tsp chia seeds
- 1 tsp sunflower seeds
- 1 tsp pumpkin seeds
- 1 lime
- In a large bowl add all ingredients except for the mackerel, and give it a good mix.
- Squeeze a lime over the salad.
- Use a fork to flake the Mackerel Fillets in the can and place on top of the salad – make sure you don’t leave any sauce behind!
- Then sprinkle mixed seeds on top and serve.
