I have been waiting for BBQ season for a long time now. For me it means gathering with family and friends, for good food outdoors and enjoying the wonderful weather!
I like all kinds of BBQ foods. Burgers and sausages seem to be my favourite, but I also really enjoy Middle Eastern Kebabs and Sheesh Tawooq. Barbecuing food does not only result in very delicious food, but it’s also a very healthy cooking method. I like the fact that the food does not need to be cooked in heaps of greasy oil, and the activity of barbecuing itself is really enjoyable.
This week I had 2 of my friends coming over, and we just had a simple BBQ in the backyard. We had burgers and sausages on skewers, with lots of tasty sides such as purple potato chips, spicy cauliflower with dips, cookies and ice lollies for dessert. I’m very excited to tell you about the burgers, sausages, sides and desserts that we had in detail, so please carry on reading this post…
The star of the meal was, of course, the burgers. What’s special about this burger is the high-quality beef steaks, I used Iceland Luxury Ultimate Steak Burgers. They’re 95% British beef, mixed with onion, miso powder, pepper, and salt. They’re simple but as you can imagine, very delicious! These beef burger steaks are suitable for barbecuing, grilling, or even frying.
To make these burgers really special, I made my own homemade ranch sauce to add to the burgers. I’m a big fan of ranch, and I usually make my own sauce at home as nothing beats homemade sauces. The ingredients that I’ve used to make this ranch sauce are pretty simple. All you need is mayonnaise, vinegar, onion and garlic powders, herbs and finally salt and pepper. Whisk all ingredients together in a bowl, then refrigerate until you’re ready to assemble the burgers.
These burgers were served with gorgeous Iceland Purple Potato Chips. The chips are very colourful (this kind of foods really cheers me up!), and are coated in a lovely crunchy coating. They can be either baked or deep fried.
Beef Ranch Burgers
- 2 beef steak burgers
- 2 bread buns
- 1 sliced tomato
- 1 sliced radish
- 2 lettuce leaves
- 1/2 cup mayo
- 1 tsp apple cider vinegar
- 1 tbsp dill
- 1 tbsp parsley
- 1 tbsp chives
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- salt & pepper to taste
- For burgers: You can either choose to barbecue, grill or fry the burgers. If frying, take a frying pan and heat 1 tbsp of oil. Then fry the burger steaks for about 4-5 minutes on each side, or until cooked to your liking. If grilling, just grease the grill with oil, then place the burger steaks in the grill, until cooked to your liking.
- To assemble the burger, cut the bread buns to halves, start by placing a lettuce leave on the bread, followed by the cooked beef steak, tomato slices, radishes, 1 tbsp of ranch sauce and top with the other half of the bread bun.
- To make ranch sauce: In a bowl whisk all the ingredients together. Refrigerate until you're ready to assemble the burgers.

When I went to pick it up, I was given two huge bags filled with new Iceland products that I’ve never tried before and was very excited to try. I mean purple potato chips? If you have been following me on social media recently, you’d know that I’ve been to 3 trips in the past 2 weeks (Paris, Geneva and Lisbon). And the fact that all of these products are actually frozen, made everything much easier as it meant that there was no pressure on me having to use everything up before it goes off. I’m still stocked up on great ingredients and meals from Iceland in my freezer and could use them whenever I want. For me that means, minimal food waste! These foods are frozen for freshness, the quality is amazing and they really make my life much easier.
One of my favourite products in the mystery goody bag were Iceland’s Churrasco Sausage Skewers. What I love about these sausages is that they come ready on skewers, which is something I really appreciate as all I need to do to serve them is either throw them on the grill or fry them on a pan. Quick and sooo easy! This product is suitable for barbecue and could also be baked in the oven.
I was also really impressed by Iceland Spiced Cauliflower, what a wonderful side dish! The Indian style dressing that they come in is very flavourful and delicious. These are also suitable for vegetarians, and are ready in half in hour! The best way to cook the cauliflower is by baking it in the oven, but I also found that frying works very well too.
And finally for dessert, as I mentioned before we were outside grilling the burgers and the sausages. I suggested that we make an experiment with Millie’s Ready To Bake Milk Chocolate and Triple Chocolate cookie dough and try and make them in a dutch oven. We lit a little camp fire, and put the frozen cookie dough in a slightly greased with butter dutch oven. We closed the lid, and let the cookies cook for about 20 minutes. And the result was unbelievable! I really thought that the only way to make cookies was in an oven, so later I experimented with the cookies again but in a regular non-stick pot over the stove, and it worked!
Millie’s cookies come in packs of 6, with only 191 calories per cookie. They’re top quality and very easy to make, as all you have to do is remove the dough from the packaging and bake!
