Why You’ll Love This Recipe

  1. Barely a Recipe – This isn’t exactly a recipe, I’m just showing you a great technique to toast the bagels, cook cheesy eggs, and assemble the bagel.
  2. Easy – You can make 4 bagel sandwiches in under 30 minutes! Feed your family well in the morning before they start their day.
  3. Versatile Recipe – You can personalize this bagel sandwich and make it yours, I will also leave some suggestions on what you can add below.

Key Ingredients

Here’s what you need to make these breakfast bagels!

Ingredients needed to make bagel breakfast sandwiches

Complete list of ingredients and amounts can be found in the recipe card below.

  • Bagels: Any type of fresh bagels can be used here, choose your favorite! Go for onion, poppy seed, or everything bagels (the ones I used).
  • Crispy Bacon: You will need good quality thick-cut bacon that is cooked until crispy and nice.
  • Cheese: I like American cheese to make bagel sandwiches, but if you want to use something else then go for sharp cheddar slices, Mozzarella, Havarti, Pepper Jack, Colby Jack, Gruyere or swiss cheese.

How To Make Bagel Breakfast Sandwiches

Collage of four images showing how to toast the bagels and fry eggs with cheese
  1. Prep the Oven and Toast the Bagels: Preheat the oven/broiler to high heat, and place the oven rack right under the broiler. Place the sliced bagels on a sheet pan, cut side up. Butter each and place under the broiler until toasted. Remove from the oven.
  2. Add Cheese: Add a slice of American cheese to the bottom half of each bagel, it will melt.
  3. Fry the Eggs: Heat oil in a pan over medium-high heat, when hot add two eggs, season with salt, pepper, and chili flakes if desired, and cook for 1 minute. Flip, and season again.
  4. Add Cheese: Add a slice of American cheese to one of the eggs. Then add a splash of water to the pan and cover with a lid. Cook for 30 seconds or until your desired cook on the eggs.

Tip!

Do not overcook the eggs! You want them to set but stay jammy when you bite into them. Remove them from the skillet as soon as they’re ready.

  1. Add Bacon: Place 2 slices of crispy bacon on the bottom of the bagel half on top of the cheese.
  2. Assemble: Then add the cheese egg on top of the bacon, and top with the other fried egg. Drizzle with hot sauce.
  3. Serve: Cover with the bagel top, repeat with the remaining ingredients to make the rest of the bagels, and serve immediately while still warm.

Recipe Tips

  • You don’t have to turn on the oven, use the skillet to toast the bagels instead! Butter the bagels and toast them on the skillet buttered side down. To melt the cheese, turn the bagels over, add cheese, and cover with the lid until it’s melted.
  • Add-ons: Personalize the sandwich and add favorite ingredients! Think fresh slices of tomato, sliced avocado, spinach, or arugula. You can even do sliced red onions with smoked salmon if you like. Or other meats like deli ham, leftover ham, patty sausage, Canadian bacon, or turkey bacon.
  • Sauce Options: We’re doing just hot sauce here, but feel free to add ketchup, pesto, sundried tomato pesto, aioli, guacamole, salsa, or hollandaise sauce.
  • Scrambled Eggs: If you prefer scrambled eggs, you can definitely do that instead of fried eggs. Just make sure not to overcook them.
  • Storing: Keep leftovers covered in the fridge for up to 3 days. To reheat, I suggest wrapping in foil and reheating in the oven at 350°F/180°C until warmed through. Freeze for up to 3 months.

What To Serve With Breakfast Sandwiches

My favorite way to serve this bagel sandwich is with breakfast potatoes or hash browns, and extra crispy bacon. Don’t forget the coffee, go for French press coffee for the perfect cup of joe! Or make tea instead, and add a splash of milk.

Looking for something different? Try making homemade Arepas con Queso, Baked Oatmeal Cups, French Toast, or a healthy breakfast smoothie.

You are going to love having a loaded bagel sandwich as a breakfast option now that you’re so good at making it! Be sure to Pin this recipe so more people can see it and learn from it too.
