Almond crusted fish served with fresh wild rice salad and BBQ sauce…
One of my New Year’s resolutions for this year is to eat more balanced meals, and recently I’ve been planning my meals ahead and making healthy, light and delicious dinners to help me stick to my New Year’s resolutions. I’m not saying that everything that I eat is 100% healthy, but I’m trying my best! One of these really delicious meals that I’ve been making is this almond crusted fish with fresh wild rice salad and BBQ sauce. I use frozen Basa fish from The Saucy Fish Co. and it comes with a lovely Asian BBQ sauce.

ALMOND CRUSTED FISH
I love nut crusted fish, my favorite nut is almond when it comes to crusting fish but I also really like to coat fish with crushed walnuts from time to time. For this basa fish recipe I’ve chosen almonds as I’m pairing this with a lovely Asian BBQ sauce, and almonds are milder in taste than walnuts so they’re amazing with this BBQ sauce.
You will need to grind the almonds, I like to leave them a bit coarse for that nutty texture but you can of course finely grind the almonds before coating the fish in them. However, the texture will be very Similar to flour crusted fish.
To make this meal a balanced and filling meal, I also made a fresh tomato cucumber salad with wild and brown rice and topped the salad and the fish with pomegranate seeds and crushed pistachios. This meal only takes 45 minutes to prepare and it’s better than any fish that you can order at a restaurant!
HOW TO NUT CRUST FISH
This is much easier than you may think. All you need to do is get 3 shallow dishes, add flour to the first one, beaten egg to the second and crushed almonds to the third. If you like, you can season the flour with salt and pepper for extra flavour. To make sure that things don’t get messy, make sure to use one hand to work with the dry ingredients (flour and almonds), and the other hand to coat the fish in the beaten egg. So first you coat the fish with flour using the first hand, then you dip the fish in the beaten egg using your second hand. Again, using the first hand coat the fish in the crushed almonds and transfer to your pan to lightly brown the fish.
You will need to cook the fish in a pan over heated oil for 2 minutes on each side until it’s golden brown, and then you will complete cooking the fish in the oven.

Almond Crusted Fish with Wild Rice Salad
Make the fish
- 2 The Saucy Fish Basa Fillets
- 50 grams almonds
- 100 grams flour
- salt & pepper
- 1 egg
- 1 tbsp vegetable oil
- 1 sachet Asian BBQ sauce
Make the salad
- 1 tomato chopped
- 1 cucumber chopped
- 4 tbsp parsley
- 3 tbsp mint leaves
- 1 lemon juiced
- 60 grams brown and wild rice cooked
- 1 tbsp olive oil
- salt & pepper
- 1/2 Pomegranate seeded
- 2 tbsp pistachios crushed
- Remove fish from packaging, and thaw.
Make the fish
- Place almonds in a food processor and process until finely chopped.
- Get 3 shallow dishes. Put flour with salt and pepper in the first dish, beaten egg in the second, and chopped almonds in the third.
- Coat each basa fish piece in flour, followed by egg and finally in almonds.
- Heat oil in a pan, and cook the fish on each side for 2 minutes or until golden brown. Complete cooking in the oven, this should take around 10 minutes on 180c.
Make the salad
- In a bowl mix chopped tomatoes and cucumbers, add parsley, mint leaves, brown and wild rice, olive oil, lemon juice, salt and pepper. And give it a good mix.
- Take two plates, and divide salad between them. Top with pomegranate seeds, and cooked basa fish. Sprinkle each fish fillet with crushed pistachios.
- Serve with BBQ sauce on the side.
